      Simple and good. I accidentally bought purple sweet potatoes so the color was a little startling! My husband liked as it, and I wish there had been just a bit more of the cheese mixed in to the layers

  • Butternut squash risotto with sage

      Really tasty, but as written this recipe makes a rice dish, not risotto. After taking it out of the oven I was missing that rich creaminess of a risotto and so started adding water and stirring to release the starches. After about a cup of water it got to the level I was hoping for. I suppose it was easier to bake and stir at the end than to stir regularly throughout cooking in the stovetop. The combo of butternut squash and sage was delicious! An excellent autumn or holiday dish.

      These were quite good! The recipe makes a lot more filling than sauce, so would adjust that next time. Though leftover filling can be used simply over rice in a rice bowl. Didn’t have sour cream, but served with Greek yogurt that that was really nice against the sweetness of the filling.

      Good idea. Yields a dense focaccia. Really needs extra toppings for flavoring. My mash was not heavily seasoned going into the dough and that made for an under seasoned bread, even with the required 1ts of salt.

  • Quinoa & broccoli from the oven

      Surprisingly tasty! Tasted like a healthier version of a Midwest casserole. The quinoa gets completely mushy by the time it has cooked on the stove and then again in the oven - for more texture, maybe undercook it a bit. I like a little crunch in my broccoli so only roasted for 15 minutes before assembling. A happy exercise in delicious simplicity as it, but I can see a whole host of other veggies working here too.

  • The greenest crustless pie

      Subbed cauliflower for the green beans because it’s what we had on hand, and we thought it was a fortunate swap! Very nice! Overall this pie was simple and tasty. Used extra herbs - Dill, Parsley and Cilantro. Tasted healthy-ish.

  • Comforting meatballs

      These were good - I really liked the piquant wine lemon sauce! The meatballs fell apart pretty easily. For shrimp I used regular Argentine shrimp and just cut them into small pieces. Maybe I should have cut them smaller so the meatballs would hold together better.
