      This recipe makes good slightly sweet waffles or pancakes. You might want to reduce the sugar a bit. It is one of our go to recipes for pancakes and waffles.

      these were fine....next time I'd whisk egg whites separately. I've had better multigrain waffles, though; these weren't very crisp - a bit doughy.

      Reduced the sugar, mixed the topping into the batter, and added an extra apple and did not peel. Cubed the apple. Used two types of cinnamon. These are great muffins, and they freeze well. I did follow the recipe as is the first time, and later made my own alterations.

      Used fresh pineapple instead of apple, currants instead of raisins, and 3 large eggs instead of 1 egg and 2 egg whites. Increased ingredients by 1/3 to make 24 muffins instead of 18. Moist, tasted pretty good, though maybe would like better with an additional spice besides cinnamon. Going to freeze some and see how they do. The nut/wheat germ topping didn't stick to tops well, a lot fell off, so next time mix it in the batter (and possibly increase amt of nuts a bit too) or omit. Also, try food processor to chop pineapple and shred carrots.

      I love this recipe and have made it over and over. It's easy, healthy, and tastes like it's way more work than it is. The pomegranate juice transforms into a wonderful savory sauce as the dish cooks. I just made it for a dinner party this weekend, and it was a big hit. It worked very well with couscous and the Celery salad with dates, almonds, and Parmigiano from the Six Seasons cookbook.

  • Creamy dill sauce

      A delicious plain yogurt/low fat mayo sauce that's excellent served with the Easy Salmon Cakes (on the same page). If you don't like dill or are allergic to it, you could substitute mint or Italian parsley. Do NOT substitute no fat mayo for the low fat mayonnaise.

      Perfect! And I even followed the directions (mostly) for the gravy using the neck to flavor the saute; doubled the volume of liquid (used Trader Joe's turkey broth packets) and a little extra Madeira. Nearly wept with joy at my first ever truly memorable gravy! while the recipe called for no stuffing, I ignored that and made my Mom's traditional stale bread, onion, celery, sage, and tons of butter version. There was very little leftover.

      I used beet greens. Quite tasty--loved the zip added by the lemon juice. Might bump up the honey just a little next time.

      We at one point were so completely taken with this recipe that we made it once a week. Our frequency rate went down because our former CSA meat share was turkey-free but the enthusiasm remains high. The water chestnuts add the perfect amount of crunch! Riot of flavor, excellent texture. This is a keeper!

      Bright flavors, easy to make if you enjoy dicing ingredients (which I do). I might enhance leftovers with a bit of poached salmon and skip the pita. We will make this again.

      Huh. These had 88 reviews with five stars on Eating Well's website, but I found them disappointing. Not very flavorful, and overall just boring. I omitted the chocolate chips and upped the walnuts, but if the batter were good enough, that shouldn't matter.

      Update from my 2017 note: guess the chocolate chips matter; this time I thought these muffins were delicious.

  • Chocolate-graham muffins

      These are pretty darn good for a healthy chocolate muffin. I used around 7.5 full cracker sheets to get 1 cup of crumbs. I also added another tablespoon of oil as these muffins tend to be dry, but what would make it even better is a couple of tablespoons or so of prune puree (in addition to the extra oil). It's worth it to keep checking every minute after 15 minutes to see if they're done....I went straight from 15 to 17 minutes, and wished I'd caught them one minute sooner.

  • Green bean salad with corn, basil & black olives

      I usually make this salad at least once each summer - so fresh-tasting and flavorful. I added about 1/4 tsp of salt, and did larger servings (6 instead of 8) to make it a dinner salad. One night I added tuna, and another eggs and cotija cheese.

  • Wholesome cornbread

      This was great for its simplicity; easy to get in the oven. There are other cornbread recipes we prefer (Deborah Madison's skillet cornbread or Maria Speck's Greek style cornbread), but this one does the trick in a pinch.

      Cooked this for our family. My mom especially thought these were amazing -- she loves dill. I on the other hand thought it was a little heavy with dill.
