      A winner. Another recipe from this special diet cookbook that doesn’t taste special diet. We liked the turkey bacon in this- made the whole salad pop with flavor. Changes: I didn’t have red onions so substituted 1/2 cup of a yellow one. I had some leftover red cabbage that I wanted to use up and added a 1/2 cup of that, chopped. We thought the cabbage improved the overall flavor. The water chestnuts provide an interesting and unusual crunch. I used florets from broccoli heads for my slaw. Will repeat.

  • Chicken breasts with roasted lemons

      The chicken & lemon outcome was a bit bland but paired with glazed roasted carrots with cumin seeds, mustard seeds, sesame seeds and nuts ( King Tut’s Carrots), the overall entree was delicious. Because the chicken/ lemon flavors are so subtle, this dish needs a complementary but more substantial flavor side as a foil. I liked the straightforward directions and easy preparation on a busy weeknight. Nothing special but a healthy protein meal.

  • Chutney-glazed chicken

      Made this for my husband and me. I really liked the predominant curry flavor mixed with just a small amount of chutney in this version of chutney chicken but my husband thought it was just okay and not as good as the Colorado Collage recipe I usually use. That one calls for much larger amounts of chutney and curry but the curry flavor is diluted by other ingredients, including butter and cardamom. Both recipes are easy bake-in-the-oven entrees. So, I may just do one small baking pan for him using Colorado Collage and one small pan for me using this recipe. This version is recommended if you enjoy a predominant curry powder-flavored chicken.

      A straightforward recipe, as the title suggests. I used chicken breasts pounded thin, marinated in lime juice, cilantro leaves, and olive oil, and then stove-top grilled. That preparation and cooking elevated the flavor. I was dubious about using barbecue sauce as part of the filling, but it tasted surprisingly good. I served the burritos with a big green lettuce and tomato salad. I'll add this to my list of go-to recipes when I need a quick dinner.

      So delicious! Recently found out my HA1c level is elevated, and that motivated me to buy this book. This was my first entree from the book and you’d never know it was a special diet recipe. Husband loved it. Tasted very much like the filling for a particularly flavorful taco. I may add a corn tortilla as the base next time. Doubling the Coleslaw would make it even better. Served with Spanish - style rice (ATK).

      Very much a dish like one I’ve had at a spa lodge- light and flavorful but flavorful in a subtle way. The fresh chopped dill is the main flavor. This was easy to prepare.

  • Salmon roasted with tomatoes and olives

      The aroma from the oven during the roasting of the tomatoes, onions, and garlic was heavenly- and the finished topping was perfect. My tomatoes were browning at the edges at 20 minutes, half the time stated, but the salmon was ready to eat in the prescribed roasting time zone ( 12 minutes). I served the salmon with the suggested roasted red potatoes and French green beans—a lovely fall meal.

      Surprisingly delicious! We really liked the mustard sauce ingredients. I roasted my chops for 8 minutes, and they were perfect at 8 minutes in my oven. Easy to prep and prepare.

  • Middle Eastern burgers

      The healthy filling ingredients added to the lean ground beef made for a moist burger, but the pita pocket needed a spread between the burger and bread to keep the burger from being dry. I added red roasted pepper hummus and that added to the flavor and texture of it. Good enough to repeat.
