Sausage and turkey meatballs in broth with escarole and pastina (Brodo con polpettine di salsiccia e tachino e pastina)

  The meatballs are the best part of the soup. They're very tender and while I used anise seed instead of fennel seeds, the flavor was subtle with the spinach. I used too strong of stock, so it was a bit salty, but still, a really good soup.

  A nice sauce that wasn't too much trouble to make. I did double the ground pork because I needed to use up the full pound, and fresh yellow tomatoes which also needed to be used that evening. It was about half and half yellow and red crushed tomatoes. It was tasty and went well with the large pasta shells I boiled up. Definitely will keep this one in mind if I need a meat tomato sauce.

  I ended up using crushed tomatoes instead of whole canned tomatoes, because I misread the can at the store. Still, the sauce was wonderful, and you should really use the tuna in oil, as I think the water packed tuna would lack the punch to stand up to the tomatoes and herbs. A nice, quick dinner for a busy night.
