      I use whole eggs, not just the yoke. And mix with parm before adding pasta water to temper. Also have used zucchini instead of panecetta or guanciale to make it vegetarian.

      I haven't made this with chicken in ages - I use chickpeas instead, usually 1 to 1.5 cans. Very flavorful and easy to pull together.
