Notes about Recipes in this book

  • Herb rice with peas and carrots

    • whitewoods on August 02, 2019

I didn't like the flavor or the texture of this one, and Rachael Ray is usually so reliable. The rice was still a little too hard. I normally always use a 2:1 water: rice ratio, but her recipe only called for 1 3/4 cups of chicken broth (the contents of a 14.5 oz can). I'll probably never make this one again, but if I did I would add an additional 1/4 cup of water. (Also, I had to use dried dill, as the fresh dill in my produce bin had gone bad.)

  • Brocco-cheese burritos

    • whitewoods on September 08, 2019

These were perhaps a little better than the Spinach-feta Mediterranean burritos on the opposite page, but nothing special really. You need large tortillas for this one.

  • Spinach-feta Mediterranean burritos

    • whitewoods on September 06, 2019

It was edible, but I wouldn't make it again. I just had some tortillas & feta cheese that I wanted to use up. The eggs seemed to disappear amid all that spinach, and these were still a little watery--even after draining the spinach very well in cloth. Also, the feta cheese provides so much salt that I think adding additional salt is unnecessary.

  • Turkey Bolognese pasta

    • whitewoods on November 25, 2018

This was delicious, and I don't even really like tomato sauces. I just had some ground turkey on hand that I was trying to use up. Mom was less enamored of it, but I think she just doesn't like whole wheat pasta.

  • Turkey tomato soup

    • whitewoods on November 29, 2018

It was okay. Very easy to make.

  • Turkey vegetable chili

  • Buffalo chicken chili

    • whitewoods on July 21, 2019

It's okay, but I prefer chili with beans. In the online video she recommends that if you're afraid of using 1/2 cup of hot sauce, then use only 1/4. I only used a tablespoon, and that was quite enough for me.
