  • Coconut and lime cake

      There is one big mistake in this recipe. She has you heat the coconut milk and add the desiccated coconut and the milk to it, but never tells you when to add this mixture to the batter. I ended up adding the mix before adding the flour and it worked well producing a very delicious coconutty cake which I will definitely repeat.

      Very pleased with how this cake turned out. I had no flaked coconut, so decorated the icing with a mixture of desiccated coconut and lime zest. It looked really pretty. Thanks Astrid5555 for pointing out the error in the recipe, I did as you suggested.

      I used large eggs even though she says medium. And I used frozen raspberries, which was a bit tricky as I had to drain a lot of water after defrosting. But the cake was really nice, it was a little wet the first day, I think from the frozen raspberries but the cake absorbed the wetness after a day and was much better the following day. I'd try this again with fresh raspberries.

      This is a quick and easy cake to make. Mine sunk a little in the middle, maybe because I had to make my own self-raising flour and the flour/leavening ratio was a little off? Nice with fresh raspberries!

      Fast as promised, but son called it "somehwat tasteless". Substituted sourcream for yogurt, since this was what I had on hand. Will not make again.

      Truly delicious chocolate cake!. Has become my go-to recipe for children's parties. No one suspects this cake to be all wholemeal. Sugar can be decreased by one third, and cake is still sweet enough for my taste.

      The cake itself was nice but there is a big mistake with the icing!! The amount should be the other way round; 200g cream cheese and 100g icing sugar instead of 100g cream cheese and 200g icing sugar. The frosting ended up being super runny and tooth-numbingly sweet! Hence the 2.5 rating.

      YUM! I made this is as a treat for hubby, unfortunately there may not be any left by the time he gets home...oops! I put a layer of grated chocolate in the bottom of the dish and poured the honeycomb over it for added lusciousness.
