      I was having my doubts about this dish at the completion of the cooking time. The vegetables, especially the onions, looked not quite cooked enough. But another 10 minutes in the oven worked well. I was also concerned there might not be enough flavor with no garlic or herbs in the mix (though cilantro is scattered on top and the chicken is marinated in spices) but actually I liked the flavor with the preserved lemon adding some bite. The chicken marinade didn't come through strongly - I marinated for 2 hours but maybe overnight would be better.
