      Makes a delicious loaf cake. Ensure the coffee is really strong to get a good flavor. My family prefers this with a coffee buttercream filling instead of the espresso mascarpone filling.

      Extremely easy to make, all ingredients in the food processor, whizz and 45 minutes in the oven. Very nice, delicate cake. Very easy to eat too. Not sure how authentic it is, as I was reading up on this cake, honey and rye flour is supposed to be the main ingredient for Pain D'epice but they're not included here. Anyhow, it's a lovely cake.

      A beautiful crowd pleaser. I used light Greek yoghurt and it was deliciously tangy. Next time I'd douse the cake with a little liqueur before filling.

      Very little effort needed, and yet it's really lovely. I did find it a little too sweet for my taste, I would try it again with less sugar. Lined the base and sides of the tin with greaseproof paper, which worked great (she didn't explain what needed to be done with the cake tin).
