      The dressing recipe will make loads so if you only want it for this, is suggest reducing it by half for the whole meal or a quarter for two of you.

      Made this as I had everything on hand and was pleasantly surprised, the salsa was a really nice accompaniment to some really salty halloumi. Nice, light, tangy and really quick to put together.

      I had been keen to try this ever since Nadiya made a cod and clementine filling for vols au vent during a Bake Off challenge. Perhaps it was inevitable that the recipe wouldn't be able to live up to such prolonged anticipation! The flavour was unusual - I'm not sure I'd have guessed clementines were the key ingredient - but not sufficiently moreish that I'd make this again. I found it slightly bitter, and wondered whether it might have benefited from a note of sweetness. My clementine peel never really softened to a mashable consistency, either.
