  Very tasty paste: freezes beautifully. Great stand-by in the freezer in tablespoon lots (ice cube trays!)
Fresh salad with nam prik (Pak nam prik)

  Made the dressing to use with a green salad using lettuce mix, 2 ripe mangos, a handful of snow peas, and spring onion. Dressing used 2 small salad onions. Makes a lot of dressing for a medium sized salad, will halve it next time. Didn’t have the dried prawns so left them out. Easy to make. Note to self: next time add fresh mint to the salad leaves.

  Made this using "Luv-a-duck" pre-packaged confit Peking duck legs.. one pack of which was enough for 4 serves. Incredibly tasty!

  This is one of my favourite recipes in the book. Just delicious! Lots of texture with the nuts. I usually use commercial red curry paste. I know, should make my own but we don't get the ingredients here BUT if you can get the ingredients, make it. I have made it when I lived elsewhere and well worth the effort. It could be vacuum sealed in small bags to be kept in the freezer. Or just eat this recipe a couple of times.

Sweet and hot crisp beef (Nuer khem phad)

  Oh, my goodness. This is so good. Nice crispy hot, sweet, salty strings of meat. You can't eat much so just a small portion as a side dish. Once the fat is stripped away from the corned beef this ends up being a fairly low fat meat dish. Freezes well.

  This was delicious. I used a really good quality red curry paste which I am sure made a difference. Everyone loved it! Definitely make again.
