      This was easy to put together and enjoyed by all who partook of it, but the recipe made a ridiculously large amount of glaze, way too much for 4 salmon fillets.

      Hubby really like the combination of teriyaki salmon & the crisp, lightly Asian-flavored slaw. Nice contrast in textures, & the flavors worked well together. Simple & relatively quick to put together for a weeknight meal; this was excellent with a light, crisp Pinot Noir.

      This had a lovely fresh taste. Couldn't find spinach fettucine which would have been a nice touch visually, & added a little taste nuance, but regular worked fine. I only used half the amount of canned tomatoes & 3/4 lb fettucine, which turned out to be plenty for 3 people. Great with a simple salad.

      Hubby really liked this one. The sauce was sweet with a bit of a kick, and a bit out of the ordinary-nice enough to serve to guests. Having no blackberry preserves, I cooked some frozen blackberries with sugar & a bit of cornstarch before adding the other sauce ingredients. The sauce was probably looser than it should have been, but apparently the flavor did not suffer.

      Good fried rice recipe--I doubled the amount of veggies called for, left out the oyster sauce, & used a little stir-fry sauce instead. Makes 4 very healthy sized servings. Didn't have a large enough non-stick pan-the regular skillet had some issues with sticking, even with all the oil called for. Still turned out well.

      Really tasty soup, and, after all the peeling & chopping, easy to prepare. Nice proportion of broth and veggies. I used golden beets since that's all my grocery offered, so no red broth for me, & also perhaps a milder beet flavor. Also out of red wine; substituted dry vermouth which was reasonable, but next time, red wine & red beets it will be!

      Excellent soup. Great flavor & body. Used whole fire-roasted tomatoes & should have chopped them finer. Used mock chicken broth & added a little white wine, plus a lonely leek & broccoli stalk. Very filling & warming on a cold night!

      Yummy! The dressing really makes this dish! Great for a summer dinner, and it's even good without the chicken. I made it with all napa cabbage, since no iceberg lettuce was in the house, & substituted chives for the scallions.

  • Creamy cheese enchiladas

      The method for assembling the enchiladas gave me a lot of trouble. Maybe it's inexperience, but dipping the tortillas in hot oil, then the sauce resulted in half of them tearing; it also made them a challenge to roll up. Flavor of the dish was good, but almost too rich, with 2 kinds of cheese in the filling & sour cream in the sauce. Too much of a good thing perhaps.
