      We loved it and both had seconds. I felt the lemon really added something. However, I would extend the roasting on step one to make the florets crisper next time.

      An easy, tasty recipe but maybe a bit basic. I doubled the pesto (homemade) and reduced the oil to a couple tablespoons.

      Blackberry icebox cake is easy to make and easy to assemble. The lemon zest and juice added to the blackberries adds a nice contrast to the sweetness of the rest of the cake. This cake is delicious and a nice summer dessert.

      I tried this one in the slow cooker. It was decent and my husband liked it, but I found it a little too mild. More like a soup than a chili to me. Maybe needs more beans and chiles?

      This was indeed super easy. I think it's probably the perfect type of recipe to give a child so they have the thrill of making family dinner without a lot of chopping and prep time. I would boil the ravioli full before baking next time, but slightly softer noodles are my personal preference.

      Well, it's a pretty and very healthy dinner. However, it wasn't a favorite at our house. The table verdict was that it needed more flavor and for the whole thing to be cooked more crisp in smaller pieces. I watched my husband pour sesame oil and Sriracha on every bite of the chicken. The vegetables came out to a steamed rather than roasted texture because they were piled so deep. Everyone did have seconds of them, but there's a lot compared to the chicken. I want to love this dish because of the beauty of the vegetable colors, but it really was just ok tasting. The cilantro and lime make it feel fresh.

      Burgers barely held together. The mixture was too wet, and salmon burgers ended up bland tasting.

      Very tasty and easy. Simmered sauce a bit longer to thicken and added the optional cream. My husband thought it tasted lemony from all the mustard, a good pairing with mixed herbs for spring.

      This was a beautiful dish that was somehow far less than the sum of its parts. We like every ingredient- how could it not be a total winner to layer those? The tzatziki clashed with the hummus I think. Or maybe the olives just put the saltiness over the top. Something was just off that we couldn't put our finger on- almost a bitterness. More of the dip top got eaten than the bottom, kind of made me wish I had made a big Greek salad or caprese salad for the occasion instead.

      It's ok dressing, but not as compelling as Hidden Valley style ranch. I'd say it's more herbal. I think it's just not enough tang for me because this recipe uses less mayo.

      I enjoyed this sauce, though my husband found it a bit too gingery for his tastes. The oven baking idea here was good in theory, but unfortunately as soon as I put the sauce onto that thick crispy coating it sogged up. We had the taste of chinese food but not really the texture. I think the real "super easy" method would be to make the sauce and toss with premade chicken nuggets hot from air fryer. Either that or the baked pieces have to be dipped one at a time in a personal sauce cup at the table.

      It's an average vanilla mug cake, which is fine in the wee morning hours when you've been craving cake for days but it's too hot to bake anything. It doesn't quite hit the mark, but not objectionable either. The recipe calls for an entire tbsp of vanilla! Quite a lot for 1 serving of cake; in many larger recipes I just skip vanilla because it's expensive and not that notable a flavor. In this, it has a slight alcohol note after cooking. Reminding myself once again it's the super easy cookbook not "super cheap".

      This dressing is delicious! She says you can keep it in the fridge for up to 2 weeks, but it will solidify. I just microwaved it for a few seconds to loosen it up and it was good.

  • Italian chopped salad

      Good! There’s a lot going on in this salad flavor-wise, and it’s nice for a summer evening when you don’t want to use heat, but still want more than a veggie-only salad. I left out the pepperoni because I wanted less meat, so I just used a cup of salami, and that worked out well. I also left the dressing and cheese to add individually because I knew there would be a lot leftover and I didn’t want it to get soggy in the fridge. I will definitely make this again.

      I had never eaten stromboli before so I'm probably not the best judge, but I liked this quite a bit. Very straightforward recipe, and the frozen bread dough made it pretty easy!

  • Barbecue chicken pizza

      I've made this a couple of times now and really enjoyed it. While I *can* make pizza dough from scratch, I really appreciate this shortcut of using bread dough. Along with rotisserie chicken and bottled barbecue sauce, it really is something you can throw together when you don't have a lot of time.

      Pretty good! I've made this twice and would make it again. The Velveeta does cut some of the tang that is really needed in the dish, so we make sure to have some extra salsa, cilantro, etc on the side to add as we like.

      Tasty, but quite heavy and salty. The ranch and blue cheese is particularly necessary for the dish. Wanted the tots to offer a little more texture than they did when I made it.

  • Gingerbread mug cake

      This is the only mug cake I have ever liked! If I am desperate enough for cake that I consider the microwave, I normally want chocolate. I am always disappointed by microwaved chocolate mug cakes. Have tried numerous recipes. Enter gingerbread. I like gingerbread warm, and with some whipped cream this is perfect. If you convert the 1/4 C measures to 4 Tbsp. you'll dirty one less item.
