      One of my favourite 'go to' recipes for lunches. If you just make the chicken part it is also really nice on a baked potato with a side salad for lunch.

      Not authentic of course but the roasted veg softened the harshness of peppers and onions. Made it without the chickpeas as a accompaniment to lemon and garlic roast chicken. Good one to share with non dieting hubby.

      I think the bacon and mushroom filling serves 2 not 4 as there isn’t much sauce.

      Not the most groundbreaking, but tasty, nutritious and a quick meal to make mid-week. I made half for the two of us and served it with steamed broccoli. I didn't have any sherry (thought I did, but when I came to the cupboard someone had drunk it...) so I used sherry vinegar, which worked well with the tomatoes and chorizo.

      Lovely recipe, was a bit anxious about serving kale to my greens-averse OH, but he gave it the thumbs-up! I served it with Delia's oven-roasted potatoes with garlic & rosemary. Delicious!

  • Thai prawn and vegetable curry

      Very tasty sauce although I did add a finely chopped red chilli (including seeds) to give it a kick. Next time I will include more prawns and rather less vegetables. Would be good with chicken rather than prawns, with the cooking time adjusted accordingly.

      I make this every time I make roast chicken. I make a small batch of stock in the slow cooker overnight and then use it straight away. I usually sub butternut squash for sweet potatoes and use whatever greens I have. I wouldn't change the ginger. Very forgiving recipe. Lovely flavours.

  • Green lamb curry (Saag gosht)
