Notes about Recipes in this book

  • Low-fat Cornish pasty

    • rodillagra on October 23, 2020

Perfectly pleasant if not exciting. Made this with the potato pastry from their veggie diet book.

  • Creamy mash

    • redjanet on January 25, 2014

Not so much a recipe, but a method of just combining mashed potatoes with crème fraîche for a creamy, fairly light mash. Worked well with the Sausages and rich onion gravy recipe on p. 43.

  • Sausages and rich onion gravy

    • redjanet on January 25, 2014

Very pleasantly surprised by how well this turned out. The gravy had good flavour (though I may use slightly less ketchup next time for less of a tang) and the cornflour helped it to thicken perfectly. Will definitely make this again.

  • Chicken Provençal

    • redjanet on August 20, 2014

This dish was simple and flavourful and went well with rice as suggested. I felt that the sauce was still slightly too thin even after adding cornflour, but perhaps I didn't stir it for long enough. The leftovers re-heated well for lunch over the next couple of days.

    • Ro_ on January 20, 2021

I used bone-in chicken thighs. This was a very flavourful and easy dish, and I'd make it again. Agree with other commenter that the sauce was thinner than it looked in the book photograph - I'd potentially add less stock next time.

  • Beef goulash

    • redjanet on January 04, 2015

I made this last night in an attempt to get back on track with eating healthily after the indulgences of the holidays. The beef was not as tender as I was hoping for it to be, but the sauce had a lovely flavour. It was a bit on the spicy side, but a dollop of sour cream (as suggested by the authors) helped cooled things down a bit and it all went very well with rice.

    • lc200 on October 30, 2013

This was very tasty, and certainly didn't feel like diet food. Very easy to make too.

  • Baked fish with chorizo crust

  • Fast chicken fajitas

    • Ro_ on July 12, 2020

Was standard fajita recipe for ages.

  • Veggie bean burgers

    • Ro_ on February 19, 2020

These get points for being made from storecupboard ingredients and being pretty tasty. However, the texture was a bit too loose for my liking: I think maybe next time I'd set the oven to a higher heat and give them 15 minutes on each side to try to get a bit more colour on them and a firmer texture.

  • Liver and bacon with onion gravy

    • Ro_ on January 21, 2021

I made this with veal livers. It was very tasty, didn't taste at all like a diet dish and I didn't miss a larger amount of bacon. Would repeat.

  • All-in-one spicy pork and rice

    • Ro_ on June 26, 2020

Tasty, easy and the kind of thing that could incorporate whatever bits of veg/meat you had lying around that needed using up.

    • njm68 on June 21, 2022

This is fab! I needed it to cook it for 25 mins more after adding the rice. I've also made this with leftover pork from the Sunday roast and that tasted fab too.

  • Beef Stroganoff

    • Ro_ on June 19, 2020

I used basse cote steak, which worked well, and full fat creme fraiche instead of half fat. I made the full quantity which gave 2 massive portions, 3 normal sized ones or 4 small ones. We enjoyed this quite a bit: it was simple but tasty. I served with crushed potatoes, but mash or rice would obviously be nice with it as well.

  • Jerk chicken

    • Ro_ on January 05, 2021

I used bone-in chicken thighs and just cooked them for slightly longer. The marinade was nice, generally this was a "perfectly nice" dish but not one I'll rush to repeat.

  • Quick chicken Cordon Bleu

    • Ro_ on January 13, 2021

Fine, but basically just left me wishing it had gone the whole hog and had breadcrumbs, even if it was less calorific this way ;-)

  • Fiery beef Madras

    • Ro_ on November 21, 2019

Did this in the pressure cooker for 20m, then 15 mins uncovered on high heat to reduce the sauce. This curry was only OK, not a lot of dimensions/depth of flavour which I should have guessed from the ingredients but oh well.

  • Sticky chicken with coleslaw

    • Ro_ on May 27, 2020

I really liked the flavours on the chicken, but mine didn't go glossy and caramelised as promised! Maybe I should have moved the shelf closer to the top of the oven. The coleslaw was nice, but I probably added much more mayonnaise than was in the recipe! This is the kind of dish I'd make again if I had the ingredients hanging around needing to be used up, but I wouldn't go out of my way to repeat.

  • Broccoli pasta

    • Ro_ on April 21, 2020

This was a delicious, very quick vegetarian meal. I doubled the recipe (+ added a bit more pasta still) for a hungry family of three. Simple but delicious.

  • Spicy bacon and tomato pasta

    • Ro_ on May 11, 2020

      Decent, but nothing that special.
