Notes about Recipes in this book

  • Lemon chicken

    • j_h on January 20, 2021

Added the zest of one of the lemons, doubled the chilli, added a capsicum, a head of broccoli and large handful of sugar snap peas and omitted the sugar. Excellent.

    • Ro_ on January 12, 2021

This definitely packed a punch of flavour - the lemon came through pretty well, though it might have been nice with some zest too. It was "saucier" than I expected, I'm not sure why. Would be nice with rice.

  • Roasted carrot, pepper and chickpea salad

    • SugarFree_Vegan on July 19, 2017

Pg 136 I love this salad as the roasted carrots add a lovely sweetness and heartiness to it and the herbs and spices make it tasty too. At 136 calories a portion you can add extra veg on the side or even have a double portion!

    • Ro_ on January 01, 2020

This is a really delicious warm salad, the combination of ingredients and the dressing just really work well together and feel hearty yet virtuous and a little unusual too. I've made this a few times, sometimes as a side dish and most recently as a baked potato topping. Even my partner, an "it's nice but where's the meat" kind of guy really loved it and didn't notice or complain about it being completely vegan!

  • Greek-style roast vegetables

    • SugarFree_Vegan on July 19, 2017

Pg 134 This is such a great recipe for using up veggies you might have at the bottom of the fridge as long as they aren't high starch to keep the calories down. Still at 176 cals a portion you can be generous with your bowlful! To add some protein you could add some cooked chickpeas or beans / lentils for a few more calories.

  • Creamy chicken and tarragon pots with rosemary potato wedges

    • Ro_ on November 26, 2020

The flavours were nice but not outstanding, and the sauce ended up a little bit too liquid for my liking. Needs to be finished with bread. I probably won't bother repeating this one.

  • Pasta with summer vegetables and Parma ham

    • Ro_ on January 13, 2021

I made a few substitutions: french beans instead of asparagus, dill instead of tarragon and some savoy cabbage instead of little gem. I also added the parmesan quite liberally rather than sticking to the quantity in the book. Overall this was a nice recipe, but nothing outstanding.

  • Root vegetable boulangère

    • Ro_ on January 04, 2021

I had such high hopes for this: I love all the ingredients individually and loved the general idea of the dish. Unfortuntaely the reality was very underwhelming: even though I followed the recipe precisely and then gave it extra time in the oven to try to get the liquid to evaporate, the bottom layers were still swimming in stock and the parsnips were just goo sitting there at the bottom. The vegetables mostly just tasted boiled, it was such a shame there was no caramelisation except for some of the potatoes on the top. Won't repeat.

  • Spring greens with harissa and garlic

    • Ro_ on January 04, 2021

I made this with some kind of unidentified savoy-esque cabbage. At first when I tasted partway through cooking it was mostly just very bitter. After getting to the lemon zest/seasoning stage it started to taste good (it needed a really good wack of salt). But the bitterness was still too pronounced for me so I added some runny honey - which really finished it off nicely and took a good deal of that overwhelming bitterness away. I would make this again - with the added honey!

  • Ham, corn and chilli muffins

    • Ro_ on July 18, 2020

Found these quite bland and underwhelming. Not a breakfast muffin recipe I'd repeat.

  • Chicken chasseur

    • Ro_ on November 18, 2020

I used dried, rehydrated shiitake mushrooms (weird I know but it's all I had), added some carrot and also didn't bother peeling the tomatoes because life is too short. The results were really tasty, I loved the notes that the tarragon brought to it. This type of dish isn't my favourite thing to eat either, so I'm not sure I'll rush to make it again, but as far as chicken chasseur recipes go it's a good one I think.

  • Broad bean pilaf

    • Ro_ on January 10, 2021

I made the variant with added chicken. I really enjoyed this recipe - while it wasn't earth shatteringly good, it was really nice and comforting. I tend to turn to risotto as an easy meal when I have chicken to use up and need something simple and filling, but actually this pilaf recipe would make a nice alternative. I would probably add more cumin and maybe a bit more spicing in general next time, but as it was it was still very nice.

  • Pork souvlaki with light salsa verde

    • Ro_ on January 12, 2021

I really liked the marinade and the salsa verde, which brought this dish to life. But lean pork meat griddled like this does have a tendency to dry out and get tough, and sadly that's what happened here. Thanks to the marinade and the added salsa, it balanced out OK, but I'm not sure I'd make this again - or else I'd use a fattier cut of pork.

  • Lamb burgers

    • Ro_ on January 04, 2021

These were great! Admittedly I used quite fatty lamb mince (in fact I minced it myself from a piece of lamb shoulder) and full fat greek yoghurt, but otherwise stuck to the recipe. The mint came through really nicely and overall the combination of flavours was perfect. They didn't really brown much or crisp up in the oven (I think they'd need to be started in a frying pan to achieve that) but taste/texture-wise it really wasn't a problem, just visually.

  • Beef and coconut curry

    • Cvtbird on April 18, 2021

Takes a long time (2.5-3hrs) but about half of that is hands on time. This is a dryish curry with not a lot of sauce so serving with veg such as the cauliflower suggested is good instead of rice.
