      This was a very nice potato soup, it struck a nice balance between richness and heaviness. I used chopped spinach instead of the kale. I also added little chunks of leftover pork shoulder that I had, which worked well. Bacon would also be good. It could use a little something crunchy, maybe, but I'll definitely make this again as written.

      These were very tasty! I used gluten-free tortillas, which was definitely a mistake because they totally fell apart. Despite that, we liked them a lot. I put some cheese inside the enchiladas as well as on top because I grated too much, but it worked well. I will probably make these again when I want something warm and comforting.
