      Tasty enough. Next time I'd make sure to dice the veg smaller so that I could get more filling into the pastie and also make it easier to fold the (I found) soft potato pastry over.

  • Potato pastry

      This was tasty enough. But mine did not turn out like pastry. Perhaps my potatoes weren't dry enough. Maybe it would be better to bake/microwave them? Anyway, the pastry was way too soft to act like pastry. It did work as a sort of extra firm mashed potato that could be rolled out and folded over the filling. But the edges just needed to be squished together rather than crimped - very definitely still mash rather than pastry. I'd have another go at making it but try really, really hard to get the spuds dry and/or add more flour.

  • Vegetarian Lancashire hotpot

      You can easily make this without the haggis and use soya mince instead. I have used a couple of different UK available brands of frozen mince which work well in any 'meat' style sauce the Tivall and also the Linda McCartney brand. You could add some finely diced carrots and celery to bulk out the sauce. You can also speed along the cooking by blanching the swede and potatoes (swede takes a little longer - say 5 mins and potatoes just 2) otherwise I find this takes ages to cook. A really tasty meal that reheats well (and is probably even nicer the next day).

      I would have overlooked this but I had the tofu and spinach and EYB did the rest. It's really tasty and fresh. Bread on the side for non dieter made it a meal.

  • Jumbo couscous salad

      This was a very nice dish, the only issue is that it uses a lot of pots and strainers and bowls for something as simple as a salad: two saucepans, a griddle pan, a platter, a bowl and a strainer. The easiest way to simplify this would be to skip griddling the broccolli, but I have to say that the slight char grill really did add something nice to the dish. Maybe next time I'd try oven baking the brocolli. This would also be nice with some feta cheese.

  • Artichoke and lemon dip

      An easy and tasty dip. My only thought is that it would be even nicer if the garlic was roasted and slightly caramelised (though would add extra work, especially just for a small amount of garlic). Alternatively, I would add a lot less raw garlic, as it came through very strongly.

  • Feta and spinach cigarillos

      I stuck to the quanities given, but only ended up with 10 cigarillos. These were nice, but not outsanding, and I'd rather just have a regular big feta-spinach filo pie.

  • Miso soup

      I omitted the greens and tofu. Overall this didn't taste a whole lot like miso soup I'm used to getting from Japanese restaurants here, but it was nonetheless very tasty. We enjoyed all the mushrooms in the soup. It wasn't necessary to add any soy sauce as the soup was already quite salty (I guess this depends on your miso paste). Would make again, would be good to try with actual dashi stock.

  • Falafel

      These turned out very crisp, in fact a little too crisp (my fault as I had the oven temp a bit higher than stated since I was cooking something else at the same time). Overall not a bad falafel recipe considering they're oven-baked not deep-fried.

  • Mushroom and lentil ragù

      Nice enough vegetarian ragu/bolognese recipe. After tasting towards the end of cooking, I added a teaspoon of sugar and a teaspoon of sherry vinegar, which I think helped bring the flavours into balance. I'd probably make this again, but I kept thinking it would be even nicer with some bacon lardons in it (which kinda defeats the point of it being vegetarian, but still... ;-) )

  • Meatless meatballs

      Loved these, a lot more than I was expecting too. I used ready-made canned lentils to help speed up the process, especially since I also had to make a tomato sauce as well as the meatballs themselves. The "meat"balls were really tasty, and had a good texture - slightly on the loose side, but still doable. Also they were a bit stuck to the baking tray after coming out of the oven, I'd put them on oiled greaseproof paper next time.

  • Veggie tacos

      I think my favourite things about this recipe were the two side dishes: the refried beans and the avocado cream were both things I'd repeat. The vegetables themselves were nice with the chipotle, but I think I'm just not a huge fan of squash - personal preference - so next time I'd probably sub that out for something else. One thing: I halved the quantities for the refried beans recipe to only use one tin of black beans, and I think the resulting quantity was absolutely fine for 8 tacos.

  • Cauliflower and broccoli cheese

      I was a little doubtful about this recipe based on the fact that after 'thickening' the milk with the cornflour it was still very liquid and not at all a bechamel consistency. But I carried on anyway, and actually it turned out fine once out of the oven. I didn't measure the cheese or breadcrumbs, I added both with abandon so probably went way beyond the quantities recommended in the recipe. Overall this turned out very nicely, and I'd make it again.
