Roasted cherry tomato tagine with feta and preserved lemon is excellent. Easy to prepare and even with Winter tomatoes from Costco it has great flavor.

Notes about Recipes in this book

  • Roasted carrot dip with herbs

    • BasicStock on February 09, 2020

Intriguing and delicious flavours. Doesn't make a lot, I would double recipe the next time.

  • Smoked aubergine and yogurt dip with harissa

    • BasicStock on February 09, 2020

Tasty and healthy dip. Will make again. Roasted the eggplants on my gas stove.

  • Runner bean tagine with tomato and dill

    • jenburkholder on December 10, 2022

This tasted very mediocre the first night, but the flavors melded wonderfully with time and came together to an excellent, well-balanced dish.

    • London_Mummy on October 31, 2025

This is a tasty dish which is so simple to prepare. The more gentle & slower the simmer, the better the flavour.

  • Chickpea and spinach tagine with yogurt

    • ccav on May 30, 2023

Very good flavor. Added trappys hot sauce at the end. An excellent recipe! Served with Israeli couscous and braised purple cabbage (Divya Alter)

    • jenburkholder on October 23, 2023

Eminently pleasant with fresh bread for a simple supper.

    • ccav on May 25, 2024

Added chopped tomato after spinach, Added fresh lemon after plating as well as dollops of labne.

  • Carrot and potato tagine with peas

    • michalow on March 21, 2023

Easy and good. I used cabbage instead of peas. Nice lively flavors to perk up the end-of-winter veg.

  • Tagine of roasted potatoes, onions and fennel with sumac and balsamic vinegar

    • jenburkholder on October 26, 2023

Flavor-wise this was great, though I modified the technique a bit. Cooked the onions and fennel a fair bit longer, cooked the pot in the oven for 20 minutes with the lid before removing it for the full baking time. Worked out well.

  • Harissa couscous with pine nuts and fried eggs

    • London_Mummy on October 31, 2025

This recipe is basic but comes out delicious & worthwhile. I substituted some leftover cooked wholegrain rice (which had to be used up) for the couscous & coriander for parsley.

  • Tagine of spicy roasted pumpkin wedges with lime

    • michalow on January 29, 2023

This is really delicious. The spices and lime juice provide a brilliant contrast to the sweetness of the squash (I used a dumpling squash). I did reduce the honey, but liked the complexity that it added, so the sweetness of the dish was not one-note. I do wish the author had given a weight for the "small to medium pumpkin." I used a 1.75 pound squash and ended up with about double the amount of spice mix that I needed.
