      I have no idea if Katy Beskow invented this recipe but it is genius as far as I'm concerned. Reminiscent of eggy bread but without the egg and everybody liked it! I used 1tsp vanilla because that's all I had left but it was fine. Will definitely make again!

      The family loved these. Made from ingredients already in the house - bonus! They could probably be a bit crisper by using more oil and making sure it was heated up to a good temperature before beginning. (Note to self - use the smaller pan next time)

      We liked this but I don't think we'll be rushing to repeat. Littlest wouldn't try. Nice to have vegan toastie options. DH suggested adding maple syrup - I think that would be too sweet for me. 3 large bananas was enough for 4.

      A really tasty and easy to make lunch or light meal, such a good idea. If you don't have any chives you could use spring onions (green/scallions) instead make sure you use the lemon though as it really makes the dish.

      I enjoyed this for a nice breakfast when the cupboards were getting a bit bare. Had no red pepper so used green and only half a tsp chilli powder to moderate heat. No avocado so used leftover roasted butternut squash and some mayonnaise instead. I liked the technique of smashing the beans a little. It would probably more accurately be called a bean burrito. Straightforward and satisfying.

      These were okay, though I tripled quantities - no point making and baking just 4 cookies in our house (and also not great for the environment). Also added many many more oats to bulk out the cookies and make them more economical. I have similar recipes for 'healthy' cookies, and I don't think I'd specifically revert to this one.

      A rare win, liked by the whole family! Gave the girls theirs blitzed up and left off the toppings. Went easy on the paprika, added chilli afterwards for adults. Used reduced fat coconut milk because that's what we had but would be lovely with regular.

      This was great - a grown-up version of something I used to make as a student and good use of the artichokes that have been sitting in my fridge for ages! Made one with vegan cheese and one without and it didn't need it imo. Very adaptable, kiddies had a less controversial version with mushroom olives chicken and cheese and M1 enjoyed decorating her own. Popular all round, would 100% make again. Would be great for a picnic or packed lunch.

      I'm slow at chopping so this took me a bit longer. I made without the onion or garlic, doubled everything except the sage. Added 1/4 cup nooch The sauce was a little bland for my taste but this went down surprisingly well with my 3yo who is quite fussy with veg. 6yo didn't like it. May work better as a bake with cheese and another layer of flavour e.g. miso?

      This was actually really good! Added some cubed tofu for protein. Adjusted the sauce ever so slightly for sweetness. Would make again.

  • Courgette and lemon pappardelle with pine nuts

      Thought this was okay. It's definitely quick due to grating the courgette, and the lemons and pine nuts are a nice touch. It seemed a bit on the dry side, though. Not sure whether I'd repeat.

      This was nice and certainly very speedy! Found the sauce a bit on the dry side, so will add another can of tomatoes next time.

  • Black bean, sweetcorn, and avocado quesadillas

      I liked this but 3yo didn't like the raw onions. If I repeated I would probably mash the beans to try and help it stick better (or use refried beans). Didn't miss cheese. Filling can be made in advance.

  • Yasai miso ramen

      I think the amount of the miso is really off in this one, 1 tsp in over half a litre of water makes for a totally flavourless broth. I added much more plus some stock powder and a little mirin to make it into a much more rounded broth. Nice idea but needed so much tweaking.

      This took me longer than 15 mins but still fairly straightforward. Stuck to the recipe as our ras el hanout has chilli in. We liked this but 3yo wouldn't eat it. Serve with rice or couscous.

  • Mediterranean cassoulet

      This was nice, though with chopping vegetables it took much longer than 15 minutes. Might also add another can of tomatoes next time, just to have some leftovers.

  • Mushroom and ale Stroganoff

      Surprisingly nice, and low effort too. Did use some cornstarch to bind the sauce. Had with pasta and really enjoyed it.

  • Pad Thai jay with lime and sesame

      This left us massively underwhelmed. Needs some protein, and could do with more of a sauce, not just a few tbsp of soy sauce.

      Delicious. Spur of the moment to feed a sudden craving. Makes a pretty large cookie. Used organic cane sugar and whole wheat pastry flour.

  • Smoky tomato pan-chutney

      Easy, went very well as a sauce for meat-free burgers, (and with the steak for the non-vegetarian in the house). Could be spicier next time - double quantity of one of the flavour-ingredients. A great way to use tomato surplus.

  • Red cabbage and apple slaw

      I used this recipe as a base for what turned out to be a delicious salad. I remembered that my mother in law used to add raisins to her red cabbage and apple salad so I did this and also added walnuts, more vinegar (I read tbsp for tsp!) and then some maple syrup to balance the acidity. Left out the apple juice and spring onion as I didn’t have them but thought the mustard was an inspired touch - yum!

      I enjoyed this, too, and was inspired by the previous review to add a trickle of maple syrup and walnuts to the slaw. Only used one apple. Would make again!
