It is so odd that recipes from chapters iii and IV are missing from the listing of recipes. My all time favorite for an hors’doeurve is the Tarte a la tomate on page 50

Mediterranean vegetable salad (Salade Niçoise)

  p. 5 -- Requires a few different components to be made ahead of time (the potatoes need to be cooked and dressed and the green beans need to be blanched) but still pretty simple and quite delicious. I only boiled the potatoes for 10 mins and the green beans for 5, I think the full cook times would have resulted in mush so definitely check early. Substituted sliced cucumbers (3 very small ones) for the tomatoes due to personal taste.
Sausage with French potato salad (Saucisson chaud à la Lyonnaise)

  p. 12 -- I did not make the sausage, only the potato salad (as part of the Salade Niçoise recipe in the same book), but it was DELICIOUS. Just a few ingredients but so much flavor from the light vinaigrette dressing. Nice light alternative to a mayo-based potato salad. Note: I only boiled the potato slices for 10 mins, and they were very tender. Would have been overcooked with the full amount of time.
French oil and vinegar dressing (Sauce vinaigrette)

Split pea soup (Potage puree de pois cassés)

  This has become my go-to split pea soup recipe. Two kinds of pork makes it hearty but the spinach keeps it from wallowing in its deeper flavors. I've made it with small tweaks when necessary and it still stands up. I've made it with the food mill as indicated but also an immersion blender and both are great.
French onion soup (Soupe à l'oignon)

  An excellent French Onion Soup. I have used this for years, although I have adapted this now for vegetarian and it is excellent. Their technique for the onions is the best for starting an onion soup.
Broiled salmon steaks with garlic and herb butter (Darnes de saumon grillées au beurre d'escargots)

  Excellent broiled salmon method. Didn't really need the garlic and herb butter as the salmon was basted with melted butter during cooking.
Sautéed chicken with cream sauce (Poulet sauté à la crème)

  Was my first time making any kind of souffle, subbed cointreau for grand marnier, forgot to add the last egg white and baked in 4 ramekins + a 6" cast iron skillet instead of the 1.5 qt souffle dish (for significantly less time). In spite of all of that it turned out pretty good I think
Homemade chicken stock

  My go-to stock recipe. I usually do 10lbs chicken/9ltrs water at a time with recommended vegetables and seasonings which ends up yielding 30 cups of stock which I then reduce down to 15 cups and freeze. It is a labor of love but it's liquid gold. Simple Stock Pg 89
