      We loved this dish. Easy to make. The Strong Vinaigrette, pg.51,is assertive but doesn't overpower the flavor of the beets. Made with red beets,but I think golden beets or a combo of both would also be nice.

  • Corn salad

      This is a great summer salad. I microwave cook the whole ears of unshucked corn. It is really easy then to shuck the corn and it's already cooked enough. 7-9 minutes for 4 ears of corn. Then just proceed with scraping the corn kernels from the cobs; toss with the roasted red peppers, salt, sugar and lemon juice. Lime juice also works.

  • Carrot and tomato soup

      Wonderful flavorful soup! I made this exactly as written except that I simplified it a bit. I didn't peel and deseed the tomatoes. Instead I cored and chunked them directly into the soup. Once everything was tender I pureed it all with an immersion blender and, strained it and returned it to the pot. Definitely will make again.
