  • Pumpkin and black bean soup

      This tastes like chili made with curry powder instead of chili powder. Not terrible, but not especially good either. Maybe the issue was cook's error? I generally followed the recipe except I roasted and pureed a sugar pumpkin instead of using canned, and I substituted 2 Tbsp cream + 6 Tbsp whole milk for the 1/2 c cream.

      This is a nice risotto with the surprising (at least to me) & yummy combination of mint and garlic; that elevated this above just a typical zucchini risotto. Worked well as a side with a pork chop for husband, & as a main for me.

      This was not as flavorful as I expected, and it took more than the 30 minutes of the title to finish the dish, with dredging, and frying, etc, even with cutting the recipe in half. The basil was very hard to detect in the finished dish which contributed to the blandness of the fresh mozzarella filling. The fried eggplant was greasier than I would have liked even after draining. It was alright, but not great.

      This wasn't anything fantastic, but a decent basic meal & quick to prepare. I added half a red bell pepper, & a splash of vermouth to the sauce, but it could probably use something else to liven it up.

  • Quesadillas with pico de gallo (salsa) and chunky guacamole

      Simple preparation but full of flavor. Would make a great snack/appetizer to pass around at a party, or a complete dinner for 2-3 persons. The recipe calls for fresh jalapenos, not canned. Also, pick up a small container of sour cream, as well. It will go well with the other two toppings/dips.
