    Couscous Salad Page 179 - Really liked this salad! Appreciate that it’s a nice way to use healthy, raw Zucchini. The toasted almond slices were such a pleasantly crunchy contrast to the softer ingredients. I bumped up the herbs, and could have easily bumped up the spices too. A nice, forgiving salad and delicious for lunch the next day. Added some shawarma marinated chicken to make it an entree salad. Cooked on 06/08/23

    Black and Orange Salad Page 204 - We really liked this salad! I supremed the oranges instead of cutting into chunks. Used cara cara oranges, which are delicious, but possibly a touch sweet for this recipe. Will seek out Navel oranges next time. Cooked on 06/07/23

    Moussaka Page 254 - We loved this recipe. I thought it could use more of the spices but my husband thought it was just right. The Moussaka has a lot of liquid in the tomato.meat portion, so next time I’d either reduce it down further before assembling, or drain some of it out. The recipe doesn’t specify what size baking dish to use. I used a 9x9 but should have used a 9x13. Cooked on 6/8/23
