      This was an alternate plan for a piece of beef intended for the grill which was waiting for the delivery of the replacement regulator ordered over a week ago. Super easy and quite tasty and the beef did get very tender as suggested by the recipe name.

      I cut this “bursting with flavour” blue cheese dressing out of a Taste of Home magazine years ago and have made it countless times. I like its slightly thinner texture but if I do want to thicken it up a bit, a little mayo or sour cream or yogurt does the trick. Tonight it is destined for a buffalo chicken dinner salad but I have also used it for steak salads or the Barefoot Contessa balsamic red onion plated salad. My mouth seriously waters when I think about this dressing :) It just occurred to me that it might be on this site...and it is.

      This was good. I don't really know what to say or add. I may have overcooked it because I accidentally erased the timer when I went to boil the potatoes--so the onions in my dish were pretty much caramelized/disintegrated. I had to add a little water at the end to stretch the sauce, but the meat was very good and falling off the bone.

      Excellent! Doubled the sauce and added extra halfway through baking. Good with couscous or rice.

  • Pesto shrimp pasta

      Barely a recipe, but a very tasty idea and super quick and easy. My pesto was already made and my shrimp were already cooked. I blanched the asparagus instead of sauteeing it. Tossed everything together with some lemon juice and red pepper flakes. Topped with panko crisped in olive oil (my own addition - recommended). Yum.
