  • Moroccan cauliflower & almond soup

      A very intriguing soup... well received by cauliflower hating DIL. I subbed almond milk for 1/2 the vegetable stock, and as I'm not fond of harissa, subbed srirarcha sauce .. I only added 1 teaspoon to the cook, and offered sour cream & sriracha as topping. Did not taste cauliflower at all!

      This was nice on a night I was feeling especially drained and not in the mood for a complicated meal/multiple pans. Do make sure to cook the chicken long enough to get a nice oven-baked brown on the crust.

      With a few adjustments I made, this was surprisingly good for so few ingredients. I didn't like the idea of throwing all the ingredients raw in with the stock and just boiling away, so I browned the ground meat, onions and garlic first, then added the rest of the ingredients to the pot. Topped with a little crumbled/crisped bacon and threw in a little bit of cauliflower that I had to use up. Very soothing and comforting meal.
