    Great rice pudding, and easy. Except it's better if you cook it for 40 minutes, but then it wouldn't fit in this book. For dessert, but also great as lunch (or breakfast, but then you have to get up really early or eat it cold). See the suggestions for elaborations on this recipe as well. They add a lot of extra taste and hardly any extra work.

• Rice pudding with rosewater, cardamom and pistachio

    Lovely, lovely, lovely. Scented with rose water and cardamom, sweet but not too sweet, exotic but not too exotic. This is a regular in our house. We usually make it without pistachios and vanilla. And it does take longer than half an hour - wait until it starts to get visibly thicker.

    Sweeter than the other rice pudding suggestions in this book: strictly for dessert, not for breakfast or lunch. Lovely color, great taste.

    Very good combination. Unless the strawberries are extremely ripe, it can use some sugar as well (1 to 3 teaspoons). And balsamic vinegar instead of lemon juice is nice too.

• Peach Melba

    I wanted to make peach Melba and found I had only two recipes. I used this one, except I didn't poach the peach as I prefer it raw, which made it less of a recipe and more just an assembly. It was very tasty though.

    Of course, rice pudding is very nice with cinnamon, as well. I just prefer his other suggestions.

    Delicious, quick and easy. Added some vanilla powder. Eat as topping for yogurt, oatmeal or on its own.

    A quick and easy way to turn home grown apples into a proper dessert. Serve with cream, icecream or plain yoghurt.

    This lives up to the title of the book and is 'real fast'. Turns fruit into a real pudding which is also very healthy as it uses yoghurt instead of cream. Make sure the grill is very hot before you start to cook it.

• Plums baked in Sauternes

    Simple and delicious. I halved and stoned the plums as I don't like making people faff about with stones. Served with Greek yogurt instead of cream, with freshly baked madeleines on the side. Tuiles would be good too.

• Hot panettone pudding

    Basically bread and butter pudding made with panettone. Instead of slicing and neatly layering it, you just tear up the panettone. I don't see the point of frying the panettone in butter though -- it's rich enough without, especially as he uses cream instead of milk (I used half cream, half milk). I soaked my sultanas in PX sherry instead of eau de vie, because what isn't improved by PX? It was delicious.

• Quick apple tarts

    You hardly need a recipe for this -- it's a very classic French tart, very quick to make, looks impressive, and tastes delicious. Tip: I made oblong ones because it's much easier to quickly arrange sliced apples in rows rather than circles, and makes for easier servings too.

    Reminds me of a recipe my mother used to make when I was a teenager- she added kirsch. The hot cherries would be beautiful poured over a good quality vanilla ice cream- deliciousness in a bowl.

    Used kirsch instead of calvados and added the grated rind and juice of an orange. Very summery and tasty. Served with vanilla ice cream. Lovely way to end a meal on a very hot day. Update 27/10/20 used a bag of Waitrose frozen cherries. Just as good and useful to have in the freezer.

• Quick chocolate cake

    This really didn't work for me - I cooked it for 2 minutes more than the minimum stated and it seemed overcooked. But aside from that, it didn't taste at all sweet and just seemed not quite right. Only made it once, so not sure if it is the recipe or some error on my part.

• Blackberries marinated in cassis

    250gr brambles, 15gr sugar, 90ml cassis. No need for cream, perfect as is.
