    Interesting recipe to make, and a good reward of flavour to effort. It was really tasty. We had raw chorizo, so cooked it longer (4 mins) and used a 280g pack. I’ve never tried to make empanada pastry before. I think I should have used medium rather than large eggs. I cooked it in a fan oven, 10°C lower than stated, and for 5 mins less. The pastry was quite tough, but I’m not sure how inauthentic that was. The filling is easy peasy.

    We're going to have Xmas in July with some of our neighbours and I am trying out some of the recipes that are traditional in Catalonia. I'm doing the entree and cannelloni are very popular. These are done with three different types of meat and love the addition of some tomato passata on the bechamel sauce. It is really comfort food for both me and hubby and used to be one of the dishes that we chose when visiting my mum back at home. Yesterday it was the first time I made this recipe and it was as delicious as I can remember from the one my mum used to make.

    I made this to use up some leftover Swiss chard stems left over from another tapas recipe. I didn't have 5 1/2 lbs. stems, so adjusted accordingly. I was pleasantly surprised--what a great way to use something that might go into the trash. It's also an easy recipe, to boot!

    The technique of this recipe was great. I used a ½ bunch of parsley and a much more garlic 6 cloves. I did not have canned peas so I cooked green beans in the sauce until just tender and removed before I added the fish. I make this with halibut cheeks and it was fantastic.

    p. 522 - I chose this recipe for its simplicity. The book calls for you to marinade the salmon in olive oil (1 cup) for 20 mins then to discard the oil. I felt this was unnecessary waste. Instead I simply rubbed the salmon w a generous pour of EVOO and called it a day. I think some of the ingredients info was lost in the translation of this book because the ingredients list 10 strips of shallot. I suspect it meant to list a shallot and strips of orange zest. The recipe suggests that you broil the salmon but instead, I opted to grill it. While the book suggests that the vinaigrette be served alongside, I used some to dress our salad and drizzled the remainder atop the plated salmon. This was a quick and delicious weeknight dinner. The flavours in the dressing were mild and next time I’d likely up the zest to boost the orange flavour. Very nice and worth repeating. Photos here: http://chowhound.chow.com/topics/846970#7341546

• Pork medallions with mustard and cream sauce (Filetes de cerdo con salsa de mostaza y nata líquida)

    Sauted some leeks first, removed from pan, floured medallions and then sauted. Removed medallions and made mustard cream sauce, added sauted leeks to sauce and then returned pork to pan. Served over rice with sauted zucchini and orange peppers on the side.

    It’s an okay recipe- the chicken comes out nice and tender, but overall I found it tastes quite bland. The sauce didn’t really stand out much and I felt like it could have been more “orangey”, even with me adding an additional stuffing of orange halves. I served it over white rice instead of mashed potato, maybe this is what caused the blandness?

    We really didn't enjoy this sauce. The sourness of the grapefruit, against the saffron, turmeric & cream, seemed unbalanced. Not for us.
