  • Slow-cooked root vegetable soup

      I made this with a few additions - some cherry tomatoes, a handful of baby potatoes, and sprigs of rosemary, thyme and sage - and it was LOVELY. Very filling. I did soften my leeks and onion before adding all the other ingredients, and my veg stock was "better than bullion" vegetable.
