    While some may suggest that Delia is uncool (shame on you!), this is a must have book if you want to try something other than turkey at Christmas. The stuffed goose with prunes and armagnac is fantastic. Accompany it with the braised red cabbage with apple and roasted parsnips and potatoes (use the goose fat to roast them in). The Christmas pud icecream is pretty good too

      Seriously good ... I used to make a large batch of these and freeze them, then make the sauce to go with them on the day of serving. Heaven on a plate!

      This is the best turkey recipe I've tried, perfect every time. If you follow Delia's time plan the whole day will run smoothly, she even factors in time for you to have a cup of tea

  • Chestnut soup with bacon and thyme croûtons

      I took a few liberties with this soup so not sure how far the flavour has strayed from the original, but it is really good, earthy and tasty with a touch of sweet. Changes I made: sweated the veg and added a big bacon bone and a peeled and diced apple (I read that in another recipe), simmered the stock for about an hour. Then added the chestnuts for a further 45 mins, blitzed the soup and done. Will feature in future Christmas menus. Note: there is an online version of this recipe, but it differs from the book.

      These are so delicious with cold meats or cheeses. For some reason my family has always used dried pears instead of fresh, using half the amount of dried, and halving the simmering time.

      This is an old favourite - separates out into lovely layers so it looks very pretty and more difficult than it is.

      This is now the only recipe I use for Christmas pudding. I'm sure it keeps well but it doesn't get the chance in my house!

      When I have served this to friends they don't believe it is made with leftovers. It tastes wonderful and can be varied according to what you have left in the fridge. I've even deliberately cooked too much food just so I can make this recipe.
