      Pg 91 This is such a great idea to add coarsely grated veggies (courgettes / carrots) to a salad to add texture and nutrients and to bulk out the salad without adding too many carbs. Toasting the coriander seeds and grinding them is much better than used pre-ground and also adds a bit of texture too. To Veganize this I had mine with some Fermented Tofu instead of the feta.
