      Almost the real thing! I cheated somewhat, by using pre-cooked leftover chicken meat. The sauce was very fluid, so I let it reduce considerably before adding the cooked chicken & allowed it to stand overnight - always intensifies the flavours. First time I've bothered with cauliflower rice... will be doing both again!

      Chicken, fish, sliced beef all work in place of prawn. Use 1 can of coconut milk and add extra broth or stock for a less filling and lighter sauce option.

      Used a whole duck, and used plums I had preserved (halves) with the plum syrup added to the chicken stock. Delicious!

  • Mexican-style braised beef cheeks

      The recipe calls for 1L of bone broth but after putting in 500ml I decided that was already too much. It was still very watery at the end of the cooking time (even after letting it bubble away with the lid off). I ended up having to retrieve the meat out of its water bath which seemed to work. It tasted great but I wouldn't make this again.
