    SUGO DI SALSICCIA, PORCINI & PANCETTA FOR THE SCIALATIELLI - p. 139 - At once hearty and fresh with the earthy flavours from the porcini and the brightness of just-picked cherry tomatoes. A five ingredient sauce that was far greater than the sum of its parts I’m excited to try more dishes from this book. I used some of the porcini water and cooked it down as the pasta boiled.
