      Lovely fresh salad with a spicy dressing. Rather than serve with guacamole I added an avocado to the salad and a few slices of Manchego. I can't imagine doing this without a freshly cooked steak though.

  • Pan-fried halloumi & roasted fennel salad with orange dressing

      I was unsure about the fennel as I'm not an aniseed fan but cooked this way it came out very nice. The orange dressing was what drew me to the recipe but unfortunately that part was disappointing and the whole thing felt as though it was lacking something. I think that I would need to adjust the dressing somehow if making again to create a tangier or sharper flavour. I suspect that I do not have access to oranges with sufficient flavour.

      This has lots of potential but there was something too highly perfumed for my tastes. Perhaps I will try again with less/no rose water or see if raisins would work better than sultanas. Would also be nice to add some halloumi or other protein to make it a satisfying lunch.

  • Layered chickpea salad with tamarind sauce & yogurt dressing

      Very tasty, will make again. The (optional) potatoes didn't soften much within the 5 minutes cooking time so I added some water to help steam them. This meant that the whole thing ended up much mushier than I think was intended. Next time I'll try cooking the potatoes first so that they can cook through before the other ingredients.
