Notes about Recipes in this book

  • Chocolate and peanut butter smoothie with a kick

    • crandall57 on March 15, 2025

Enjoyed this smoothie. Used a frozen banana and didn't add the ice. Like the hint of cinnamon and cayenne.

  • Pesto-swirled scrambled eggs

    • UKangelaW on September 22, 2018

Delicious but adding red pesto makes it somewhat unappetising in appearance. I’d blob it on top of the finished eggs rather than mix in.

  • Cozy bean and egg skillet for two

    • kiki_4i30mx on March 21, 2026

Tasty and hearty breakfast. Love that the beans give me a good fiber boost to start my morning.

  • Seeded whole-wheat banana bread

    • lean1 on August 09, 2020

I made this today. It was very easy to put together. I omitted the poppy seeds and used the sesame seeds inside the bread only. Tasted great.

    • skvalentine on February 06, 2023

Pretty good. My husband didn't like the seeds, but the kids and I all liked this one!

    • fultre on April 09, 2025

We really enjoyed this. Due to whole wheat flour and slightly less sugar and oil it is a bit more wholesome than a typical recipe. Topped with sparkling sugar and used seeds only inside bread.

    • andre_ff6cyt on January 17, 2026

My family loves this banana bread!! I leave out the nuts, but the texture the seeds give the bread is beautiful!

  • Toasted coconut muesli

    • kiki_4i30mx on March 29, 2026

Perfectly sweet and salty. My husband was using it like granola over oatmeal. I ate mine with milk. Made a ton!

  • Salty watermelon, feta, mint, and avocado salad

    • mharriman on June 03, 2022

Delightfully refreshing. I doubled the recipe for two people and served it as a side salad for shrimp. All the ingredients work together to make a very good tasting dish on a warm evening. I did decrease the salt by half but other than that left everything else the same. This was a snap to prepare.

  • Old-school pizzeria salad

    • MollyB on April 15, 2020

This is a fabulous recipe! I've made it many times, and it's tasty, (fairly) healthy, and filling. It works really well as a make-ahead lunch, mixing everything but the arugula together, then adding the arugula at lunchtime. The quality of the giardiniera pickles makes a big difference; I like it with Trader Joe's giardiniera.

  • Summer barley bowl with chorizo, cucumbers, and corn

    • MollyB on May 05, 2025

This was pretty good! I made it ahead for weekday lunches, and it was quite nice. I used oat groats and cotija cheese since I was out of barley and feta, and it was good with those substitutions (though I think it would be better with feta). It seems like a good formula that I'll play around with (whole grain + dried sausage + pickles + crunchy veggies + cheese), and maybe eat over a bed of arugula or spinach next time.

  • Summer corn soup

    • bwhip on September 01, 2018

We really enjoyed this. Tasted like summer in a bowl! Nice texture, and the flavor combination of the fresh corn, chili powder lime juice, cotija and herbs was excellent. Easy to put together, and makes a really big batch.

    • patioweather on July 17, 2021

No one needs this much corn soup. Cut recipe in half.

    • gamulholland on February 27, 2023

This was tasty but was a LOT of soup. Definitely agree with halving the recipe. I think, having made this and the baked potato soup in rapid succession, that I should just stick with the broth soups from this book— the ones that are healthy versions of cream-based soups are good but not great.

  • Loaded baked potato and cauliflower soup

    • gamulholland on February 27, 2023

This kind of soup is all about the toppings, so it was fine that it’s a very healthy soup (no cream, just cauliflower and potatoes and onions). We roasted the cauliflower because roasted cauliflower is delicious, but I think that made it more of a cauliflower soup than a baked potato one? Next time I’d just make it as directed. But to be honest, I’m thinking that from this book, I should just stick with the broth soups— if we want what’s usually a cream soup, we should just make a cream soup. Tried two, and they were OK but not great.

  • Red lentil soup with cilantro-lime yogurt

    • UKangelaW on September 22, 2018

A good basic soup, glad I went with my instinct to add garlic. Lentils love garlic!!

  • Miso chicken noodle soup

    • lizbot2000 on May 02, 2018

This did not set my world on fire, but it was pretty good. The egg yolk was a nice touch. Leftovers with more kimchi tasted better than the soup on the first day.

  • Polenta rounds with fried eggs and avocado-bean salsa

    • lizbot2000 on April 18, 2018

This is IT. The weeknight recipe I've been looking for. Super fast, super easy, vegetarian, filling - awesome all around. It seriously took about 10 minutes to make, if that. I kept the yolks runny, which made the bean salsa extra delicious. We'll be eating this really often, I think.

  • Shortcut shakshuka for two

    • Cassondra on February 06, 2026

The perfect quick meal to use up a little leftover marinara sauce.

  • Crispy broccoli, pepper, and burrata sheet pan dinner

    • lizbot2000 on March 19, 2018

This was very easy and a lot tastier than it had any right to be for how much work I put in. Good for a weeknight if you're not too hungry - it'll take a good 40ish minutes, but almost all of it is just roasting in the oven. I am a sucker for roasted broccoli anyway, and the crunchy French bread with the gooey cheese added awesome texture. We'll definitely be making this again.

    • MollyB on March 17, 2019

Good, easy recipe. Would probably work well with other vegetables. I liked the technique of adding cubes of bread to a sheet pan of roasting stuff - I'll definitely do that with other dishes in the future. The only thing I was uncertain about was the lemon slices; I think I just don't like whole lemon slices in any dish, so I'd leave them out next time, and may add some lemon juice at the end.

  • Quick rotisserie chicken tacos with smashed avocado

    • mharriman on January 13, 2019

This was the first recipe I’ve made from this cookbook, and it was very good. I used leftover chicken from a whole chicken I roasted yesterday. We liked the chicken, mashed avocados, and pickled onions combination. Will repeat. Very quick meal, especially if you already have the pickled red onions made.

  • Chicken and greens sauté with peanut sauce

    • seherhussain on July 10, 2019

This was a great, healthy stir fry! I used almond butter instead of peanut and also doubled the curry powder measurement after tasting the sauce. I don't think the leftovers hold up the next day as the bok choy get soggy. Will make again!

  • Roasted curried chicken and grape salad

    • lizbot2000 on March 18, 2018

This was delicious and super-easy. It will definitely be making it into our standard weeknight rotation. If you cut the broccoli and grapes ahead of time, you just have to throw the chicken + broccoli + grapes on some sheet pans and roast 20 minutes while you get the lettuce + extras ready. All of the flavors go together really well, and the chicken and crunchy cashews make it feel satisfying. Highly recommended.

    • bwhip on January 05, 2019

Very tasty recipe. Nice and light, while very flavorful. Lovely contrast between the sweetness of the grapes, the spice of the curry, with a nice crunch from the broccoli and cashews.

  • Paprika-rubbed chicken thighs with smashed cauliflower

    • mharriman on June 03, 2019

Tasty! Easy to prepare and cook.

  • Pork tenderloin and carrots with tangy romaine salad

    • MollyB on June 27, 2019

Meh. For our tastes, the flavors really didn't work together in this recipe. All the components were OK on their own, but we didn't like them together. We didn't have avocado, so didn't 100% follow the recipe, but I'm not sure it would have made much of a difference.

  • Juicy pork chops with sweet potato, fennel, and apple hash

    • bwhip on September 22, 2018

Very tasty dish. The seasoning on the pork chops really take them to another level, and the hash has great flavor and is a perfect accompaniment.

  • Banh mi rice bowls with spicy pork and Sriracha mayo

    • lizbot2000 on April 21, 2018

Ahhhhhhh this was so good and so easy. I am a huge lover of ground meat rice bowls. Cook up some ground meat, throw some seasoning on, dump on top of rice. Somehow I'd never tried a banh mi version, but holy moly did this end up being both super simple and super good. I was wary of all the fish sauce, which smelled a little intimidating, but the mix of pickly vegetables, umami-y meat, and spicy mayo was really, really good.

  • Pork and mushroom Stroganoff

    • MollyB on April 17, 2018

Good but not great. It was a tasty, quick (reasonably healthy) weeknight meal. I would make it again if I had the ingredients on hand, but I wouldn't go out of my way to make it again. Adding some dried porcini mushrooms might be a good idea.

    • lizbot2000 on May 02, 2018

When it comes to dinners on weeknights, I really don't need something mind-blowing. I just want it to be easy and to taste pretty good. This is a solid B - a nice and relatively quick and easy meal that makes lots of leftovers.

  • Coconut curry noodles with shrimp and napa cabbage

    • bwhip on September 10, 2019

This was really tasty, and very easy to toss together on a weeknight. Nice depth of flavor for something so simple.

    • gamulholland on May 01, 2025

This was easy and really flavorful. There was no Napa cabbage in the store, so I went with baby bok choy and it worked well too. Thai Kitchen red curry paste is mellow enough that I really could have thrown in the entire little bottle— I’ll do that next time. The light coconut milk made it such that my kid who doesn’t love coconut in savory meals (just dessert) enjoyed it a lot— the flavor was there, but not overwhelming. Basically it went over well with everyone.

    • jen_psw6bm on March 16, 2026

Pretty tasty and super easy. Would probably prefer it to have less coconut broth.

  • Dried oregano Italian vinaigrette

    • MollyB on April 15, 2020

Originally made this for the pizzeria salad in the cookbook (and it's good with that recipe), but it has since become my go-to basic vinaigrette recipe. I almost always have a jar of it in my fridge - I like it with grilled vegetables, grain bowls, green salads.

  • Ginger-molasses buckwheat bars

    • okmosa on April 17, 2020

This is one odd recipe. First there is just far too much butter. Then maybe because there is so much butter the molasses and ginger flavors are buried. Then the little bit of buckwheat and whole wheat flour is hidden behind the molasses. And why three egg yolks? Just unnecessary waste. Finally, for being bars, this is baked in a round and cut in pie slices which is non traditional but certainly could be overcome. Overall I have no reason to make this one again.
