  • Cheese shortbread

      Made with parmigiano reggiano. I used thyme, caraway and chipotle to top but we couldn't taste the toppings at all – the parmesan was dominant and VERY pleasant. And the house smelled divine from it! A lovely, light biscuit, and quick and easy to prepare (but needs an hour in the fridge) and I will definitely make this again.

  • Cheese & chorizo tear-&-share buns

      These are so tasty! The only change I made was to knead the bread until elastic and then add the cheese etc and knead for a min or 2 until well combined. Otherwise I followed the recipe and made 8 large buns/rolls. Proving in my top oven worked great - on to 50 deg then off and I had to pop some kitchen roll between the oven racks and the bowl as they were hot but otherwise it wasn't too hot and proved really nicely. They needed 24 mins in my fan oven at 200. I cooked them in my le creuset tray and it worked great, the bottom and top were lovely and crispy and the middle light and fluffy. Definitely one to make again!

      Delicious with salted butter. The malt and treacle flavours come through in a subtle but really nice way. All done in 45 minutes.

  • Gram flour Yorkshires with curry sauce

      I've not cooked the curry part (but I'm sure it's good as I've made a few of their tasty curries from their other book) so this is just for the Yorkshire's. The gram Yorkshires are so good! They puff up just like a regular Yorkshire's and you really wouldn't know that they are gluten free! Definitely on my list to make again and I'm going to use the basis of this recipe and combine with my favourite toad in the hole recipe and see if I can make it gluten free. I would recommend these even if you don't need to avoid gluten!

      Made Fudge Slice from bakingwithgranny.com. As unable to get fudge we substituted werthers soft caramels; they were hard work to eat. February challenge.
