      Easy and good. First time using air fryer for eggs. I like my yolks a little on the underdone side so I did a few min less than suggested. Good but too done for me. Next time I'll try few min less.

      This was great! I should’ve allowed myself a little more prep time for chopping and peeling to avoid running out the door frantic to get to work. Did not preheat the air fryer and ran eggs under cool water before peeling and the slightly gummy egg was just perfect. Super chopped the grape tomatoes because that’s just how we like it! Will definitely make again.

      Delicious. I used white rice since I was out of brown. I substituted precooked chicken bacon for the bacon, so I used a tsp of avocado oil to sautee the onions. I like that this recipe calls for half regular rice and half cauliflower rice.

      It does taste quite cauliflower-y, maybe I cooked the raw cauliflower rice too long. Otherwise good idea to bulk up the brown rice and simple Combination for a savoury breakfast.

      These are pretty bland. This recipe needs more fat, ideally in the form of butter; alas, that is not the point of this book. I'd recommend increasing the salt and perhaps incorporating a bit of almond or vanilla extract to give these a fuller flavor.

      Made these and froze them right away. I tried them after a week, microwaved for about two minutes. Tasted really good. Would also be nice in a lunchbox.

      Really good consistency! I used liquid allulose instead of honey for a lower sugar version. Had it with defrosted pomegranate seeds and made a mixture of crunchy natural peanut butter, hemp butter and poppyseed butter. Also added a decent amount of salt to the oatmeal.

      This was good although I am not sure I can fairly judge it as I made some substitutions. I used full-fat greek yogurt which added about 20 calories to each slice and substituted cherries for the raspberries. I also added 1/2 tsp lemon oil to up the lemon flavor.

      Super easy and delish. I used Rao's marinara to save time and, since I don't have a spiralizer, I used a vegetable peeler to make zucchini ribbons. The use of frozen riced cauliflower as a replacement for breadcrumbs worked great- I will keep that trick in my back pocket. Kept well for a couple of days in the fridge.

      I like this recipe and the meatballs were surprisingly good with cauliflower rice instead of breadcrumbs. For individual sized meals that I freeze, next time I will bump up the amount of meatballs per serving by 50%.

      I made these with chicken breast that I minced in the food processor although the recipe stated not to use pure chicken breast. Surprisingly the meatballs still weren’t dry so would do again this way. Instead of frozen cauliflower rice I chopped fresh cauliflower very finely with a knife. I just made the meatballs and kept them in the freezer for later use. My toddler and I already tried one and it tasted really good!

      Delicious dinner reminiscent of a healthier burrito bowl. The seasoning on the chicken was nicely spiced and the bean component was flavorful and came together quickly. I would make this again.

      I love this one. The recipe indicates 4 servings for this recipe but I find that portion size a little small for me. I now double the recipe to make 6 servings. I found that with a large 14-inch nonstick pan, I can make a double recipe without any additional cooking steps, although I do need to cook the cauliflower rice a bit longer.

      Delicious! I ended up using all the sauce with half the meatballs as that's the only flavouring for the bowl. Also used all the quick pickled carrots and radish for two servings. Radishes got lost in the mix, I won't bother with them next time, and there will be a next time.

      This was very good and a complete meal. This took longer to prep than I thought it would. I added the jalapenos to the pickling liquid as I prefer them pickled. I used green cabbage and it worked fine. I cooked the meatballs on parchment and didn’t oil the sheet pan; this worked fine. Worth a repeat.

      Very good! Nice colours and really spicy (had some super spicy jalapeños and also added a Malaysian chili sauce on top). Would do again! Used monkfruit sweetener instead of sugar for the quick pickled carrots and radishes.

      Loved all the flavors of this dish, but didn't love the mushy texture of the shrimp cakes. I think this is my fault for over processing the shrimp cake mixture in the food processor. I would make this again and leave the cake mix more chunky.

      Easy in the instant Pot. Perfectly cooked. Delicious. I did make few changes - pobolono instead of bell pepper, 10 oz. beef smoked sausage instead of 12 oz chicken andouille (my store didn't have), dried sage & thyme instead of fresh, and only 1/4 cup rice in my bowl. I used the spicy Tony Chachere's seasoning. I added a splash of hot sauce in my bowl.

      I used chicken breast cooked in the seasoning from the Paprika roasted whole chicken recipe (very good) and didn't bother seeding or peeling the cucumbers. I would season to taste the tzatziki next time since 1/2 tsp of salt was too much and I had to add a huge dollop of extra yogurt to rescue the sauce. Overall, this was an easy, delicious dinner. I would make this again.

      These were great. Individually, I didn't love any of the components, but combined together they were pretty good. The accompanying sauce had a noticeable vinegar tang, but combined with the herbs and harissa it was perfect. The Bibb lettuce I bought had only a couple salvageable whole leaves, so we ended up serving this as more of a salad. I think I prefer the salad form as it's less messy to eat. I substituted green cabbage for the red cabbage because it was what I had on hand. I also used the recommended Mina brand of harissa and liked it better than the normal brand I've bought in the past. I would make these again for an easy vegetarian dinner.

      I was looking for some healthy lunch ideas that I could prepare on the weekend and eat during the week. This book has plenty of ideas for that and this is the first recipe I tried. I liked it a lot. I loved cooking the filling in the slow cooker, and it has just enough cheese to make it taste like it isn't diet food. I didn't feel like they needed sour cream or guacamole.

      This was an alright recipe. I think it could have benefited from a yogurt type sauce and a more fatty meat since the meatballs turned out pretty dry. The flavor of the meatballs was good, but just too dry.

      This was delicious. Since I don't eat crab I used sautéed Lions Mane Mushrooms. I only had regular cabbage,so I used that instead of red. I did use furikake and the optional pickled ginger. I pickled some young ginger from my farm share earlier in year. Cabbage and Lions Mane Mushrooms also from farm shares.

      I believe this recipe to be a riff on a recipe from another book- easiest one pot broccoli and pasta. That recipe I have made a zillion times for my kids and this one is even better. So simple yet so delish.

      I made this and the homemade tomato sauce. I forgot to get the fennel. Used carrots, two zucchini,a sweet onion and the bell peppers. It didn’t look like enough so i added a defrosted box of chopped broccoli. I was wrong. There were plenty of vegetables! I also added Costco pesto to the ricotta instead of basil. My family loved it. Great lasagna.

      Great sauce for the roasted vegetable lasagna. I cooked it way longer to make sure my carrots were soft. I only had peeled whole tomatoes so i threw everything in the blender after cooking to smooth it out. Easy and simple.

      These were surprisingly good. It made enough filling for >16 taquitos but only had 16 tortillas. Baked for about 18 minutes. My oil mister was acting up so I lightly brushed oil on top. Edit: not quite as good after 3 weeks in the freezer. Reheated for 18 minutes in oven on a lightly oiled sheet.

      This is one of my favorite Skinnytaste recipes, and I make it pretty regularly. I at least double the amount of seasonings she calls for. Skinnytaste is great, but in my experience, one should always add more seasoning than she suggests.

      I was skeptical but this recipe was surprisingly similar to authentic gyros. It did require quite a few steps, including using a food processor AND a stand mixer. Some of us made salads with the meat, others pita sandwiches. I found it hard to thinly slice the loaf, letting it cool down a bit helped. Straightforward recipe but alot of steps for a weeknight.

      We don't have a gyro place nearby, but ground lamb can be found most of the time. This recipe was pretty easy and easily as good or better than most gyro's we've had. The addition of turkey didn't take away from the flavor. We froze half- hopefully the texture survives reheating.

      Hmm. Not great. I used skinless salmon, which were very flat, so it was overcooked (I did adjust the cooking time). If I make it again, I'll definitely use skin-on. I liked the broccolini! They were very tender prepared this way.
