Made this to use for the banana bread. So mice and fragrant!

  • Classic chermoula

    • Potawatomus on May 10, 2026

      This was quick and herbaceous.

    • eclairea on May 15, 2026

Made for the salmon recipe! Quick and delicious.

    • tacoquokka on May 18, 2026

Made this for the chermoula salmon recipe. Was great with that, also good on top of mashed potatoes and raw vegetables. Appreciated the weight measurements, and the final product came out to exactly the amount she said it would.

    • dmdmdmmm on May 23, 2026

Such a good addition to fish!

  • Preserved lemons

    • Potawatomus on May 26, 2026

The hardest part is planning a month ahead of time to use them.

  • Sweet chermoula

    • dmdmdmmm on May 03, 2026

In it’s “raw” form, it’s actually pretty good! I feel like it would be such a great combo with fish or chicken like a chimichurri.

    • Potawatomus on May 18, 2026

I made mine to go with the cornflake crusted chicken. This was good!

    • eclairea on May 25, 2026

Made for the chicken tenders recipe. Delicious!

  • Harissa

    • Potawatomus on May 10, 2026

This is a lovely spice blend. I added the rose petals.

    • eclairea on May 10, 2026

Used pasilla chiles instead of guajillo as that’s what I had on hand. Looking forward to using this in the dishes I’ve bookmarked!

    • dmdmdmmm on May 23, 2026

Made half a batch and i like how smokey it is! Excited to use it in other dishes!

  • Harissa chile crisp

    • Potawatomus on May 04, 2026

This came together easily and packed a lot of flavor.

    • eclairea on May 09, 2026

Easy to make, super flavourful. Used for the roasted spiced eggplant dish and was perfect for it.

  • Orange blossom and honey dressing

    • Potawatomus on May 18, 2026

Made to go on the tomato peach salad. This was a delicious and delicate dressing.

  • Almond, honey, and argan oil paste (Amlou)

    • Potawatomus on May 10, 2026

This is so delicious! It comes together in a minute if you have the ingredients on hand.

  • Caramelized onions with raisins (T'faya)

    • Potawatomus on May 20, 2026

This was awesome! It required very little babying.

  • Baked chermoula potatoes with eggs (Batata m'chermla)

    • Potawatomus on May 10, 2026

This was quick, easy and delicious. It’s a great option for when cooking for a group.

    • eclairea on May 18, 2026

This was good! Only had baby potatoes, but think it worked out fine. Served with the harissa recipe from this book and that added a nice heat.

  • Sesame and aniseed brioche (Krachel)

    • eclairea on May 11, 2026

This definitely gave my mixer a workout! At times it felt like the butter was not properly incorporating into the dough, but I trusted the process and we got there. Brioche-loving husband is very happy and stayed up late for it to cool off, just so he could try it before bed.

  • Preserved beef (Express khlii)

    • dmdmdmmm on May 23, 2026

On its own I think it was okay. A. It of a PITA bc u sorta had to babysit it as it cooks so it doesnt crisp up too fast in the oil. I ate it with eggs and some fried rice cooked with the beef fat and it was much better!

  • Peach and tomato salad with orange blossom and honey dressing

    • Potawatomus on May 18, 2026

This was a good salad that makes good use of seasonal summer vegetables.

  • Orange and black-olive radicchio salad

    • Potawatomus on May 14, 2026

This is a good, well balanced salad. As written, it makes a HUGE salad.

  • Harissa Caesar salad with crispy spiced chickpeas

    • Potawatomus on May 04, 2026

This was so good! The dressing, as written, tasted a little bit salty. So, I added a big more harissa, lemon juice and sugar to balance it out. I substituted marinated kale for the romaine hearts.

    • eclairea on May 14, 2026

This made a tasty, light dinner! One of the better Caesar salads I’ve had. My husband really loved it too. Made half the recipe and dressing, but the dressing definitely needed the full amount of lemon juice, otherwise it was a bit thick. I also used kale instead of romaine.

    • eclairea on May 16, 2026

Made this again with romaine as the recipe originally called for. It was good, but I definitely preferred this with kale!

    • dmdmdmmm on May 23, 2026

Such a good salad! The crispy chickpeas were a revelation!!!!

    • tacoquokka on May 25, 2026

Delicious, light salad. Dressing was great. May switch up the protein next time, but the dressing is versatile enough to go with anything.

  • Spiced carrots with almonds, olives, and herbs

    • eclairea on May 16, 2026

Delicious! Loved the flavour combos, and I kept eating spoonfuls of the topping.

    • Potawatomus on June 01, 2026

This was so good! The carrots taste like candy.

    • ShayLRoss on June 03, 2026

This was a very good combination of flavors. I definitely need to keep it in the oven for much longer as my carrots were not close to roasted during the cookbook's allotted time.

  • Green beans in garlicky oil ("Bil zeit")

    • Potawatomus on May 22, 2026

These were literally some of the best green beans I’ve ever had. They were the star of the show!

    • eclairea on May 25, 2026

Good weeknight side! I prefer my stewed beans a bit softer, I’d add another 10 mins to the cook if I made these again.

    • ShayLRoss on June 06, 2026

These were good although I wish the flavor was stronger. The beans turned out nice and tender.

  • Eggplant dip with red bell pepper (Zaalouk)

    • Potawatomus on May 26, 2026

The taste is there with this recipe, but the temperature and timings are off. It took over an hour longer than the instructions said to cook down. I found it needed more liquid (broth) at the beginning. I added it over an hour in, and the recipe needs more time on medium heat.

  • Triple-lemon charred broccolini with breadcrumbs

    • Potawatomus on June 03, 2026

This was a great way to zhuzh up roasted broccoli. This was quick and easy.

  • Roasted Moroccan olives with feta

    • Potawatomus on May 10, 2026

This is so easy and delicious! This is going into the appetizer rotation for sure!

  • Zucchini with parsley and garlicky warm croutons

  • Charred cabbage with harissa and peanut butter sauce

    • eclairea on May 17, 2026

Not bad! My harissa isn’t as bright red as in the book, and I used chunky natural peanut butter as that’s what I had on hand.

    • Potawatomus on June 01, 2026

I substituted bok choy for Napa cabbage. This was incredible. The sauce was so easy and tasted delicious.

  • Roasted spiced eggplant with yogurt and harissa chile crisp

    • eclairea on May 03, 2026

DELICIOUS! Came together pretty quickly and it was largely hands off. All the flavours work together so well, I would absolutely make this again.

    • Potawatomus on May 04, 2026

This was so delicious! I thought the technique of striping the eggplant with the peeler was very clever. This dish is an easy win.

  • Zaalouk and Gruyère grilled cheese sandwiches

    • Potawatomus on May 26, 2026

I had a few issues with the zaalouk, but once you have that, the sandwich is easy peasy.

  • Lentil stew with sun-dried tomatoes and kale (Adis)

    • eclairea on May 11, 2026

Homey and comforting, I liked this take on lentil stew and am looking forward to having it for work lunches this week.

  • Artichoke and pea tagine pasta

    • tacoquokka on May 14, 2026

Delicious pasta dish. I liked that it was composed primarily of pantry ingredients, making it easy to fit into the meal plan. A little longer than I prefer for weeknight pastas thanks to the 35 min onion simmer time, but the flavors are great.

    • eclairea on May 21, 2026

Nice weeknight dinner on a cool spring evening! Only made half the recipe, and there’s still a good amount of leftovers - am thinking of topping it with a crispy fried egg!

  • Creamy preserved-lemon tomato soup

    • Potawatomus on May 26, 2026

This was very good. The preserved lemon is very prominent, so this is a hit if you like that flavor.

  • Sticky orange and turmeric chicken skewers

    • SarahL on May 29, 2026

This was so flavorful. I used the broiler instead of the grill and they were super flavorful and juicy. A great weeknight dinner if you marinade the chicken ahead of time. My first recipe from this book and I’m excited about the rest!

  • Oven-baked cornflake-crusted chicken tenders with sweet chermoula sauce

    • dmdmdmmm on May 03, 2026

I wanted more flavor out of this but it ended up pretty tasty. i’m also glad it’s baked and not deep fried! The cooked down sweet chermoula paired with it nicely as well.

    • Potawatomus on May 18, 2026

This was great, and it’s an easy weeknight recipe.

    • eclairea on May 25, 2026

So yummy! The sweet chermoula worked so nicely with this dish. A fun and flavourful take on chicken tenders.

  • Chicken tagine à l'orange

    • Potawatomus on May 04, 2026

This was so delicious! It was such a huge hit at my house!

  • Sheet-pan chicken with spiced grapes, chickpeas, and thyme

    • eclairea on May 09, 2026

Low effort, high flavour reward. Delicious! Would absolutely make this again.

    • Potawatomus on May 14, 2026

This is a great weeknight option! It is delicious and very low effort. I roasted the grapes for 30 minutes instead of 15.

    • tacoquokka on May 19, 2026

Very easy recipe with minimal prep. Used chicken thighs and added more grapes than the recipe had. Agree with earlier comments to cook the grapes for longer than the recipe states.

    • dmdmdmmm on May 23, 2026

This was SO GOOD! The grapes were addicting, never cooked with spiced grapes before so this was a revelation! Chicken was also great too! I couldnt find fresh thyme so I used dried and still turned out well.

  • Sheet-pan chicken with potatoes, preserved lemon, and olives

    • Potawatomus on May 29, 2026

This was really good! It was low mess and easy on a weeknight. I would cook the lemons and olives for 25-30 minutes instead of 15 if I were to make it again. I subbed whole chicken legs for chicken thighs.

  • Kefta and kale couscous bowls

    • eclairea on May 11, 2026

Delicious! Love a good bowl meal with lots of herby flavours. Had some leftover tomatoes from the lentil stew so I chopped them up, added flaky sea salt, and added it to the bowl. I’m glad I did, it added additional freshness, and would serve it this way again.

  • Cumin and preserved-lemon beef stew (Tangia Marrakchia)

    • Potawatomus on June 01, 2026

This was really good. There are crockpot instructions for this dish in the book.

  • Lamb tagine with carrots and peas

    • eclairea on May 18, 2026

This was nice. Pretty simple lamb stew, used stew meat instead of neck.

  • Shrimp m'hammer tagine

    • Potawatomus on May 22, 2026

This was good but you get more bang for your buck with the “pil pil” version of the shrimp tagine.

  • Chermoula salmon with quick-pickled cucumbers

    • eclairea on May 15, 2026

Simple prep, delicious outcome, came together so fast, too. Even easier if you already have the chermoula pre-made. Loved all the flavours and we were both happy camper with this tasty salmon recipe!

    • tacoquokka on May 19, 2026

Fantastic salmon recipe. Used the chermoula recipe in the book, marinated for about 2 hours, and it came out of the oven perfectly. The pickled vegetables aren’t 100% necessary, but they do complement the salmon well.

    • dmdmdmmm on May 23, 2026

This was so low effort for how tasty it was!! I honestly dont think the quick pickles were necessary, the salmon was so good as is.

  • Fish "meatballs" and tomato tagine

    • Potawatomus on May 08, 2026

This was good! I added more seasoning to the meatballs after microwaving for 15 seconds. This was essentially a one pot meal, an easy weeknight recipe and easy to clean up.

  • Jalapeño shrimp tagine "pil pil"

    • Potawatomus on May 21, 2026

This was so easy and delicious. I don’t think that on its own with bread that it’s enough for four people. And, the jalapenos make it not kid friendly unless your kid really likes hot Cheetos.

  • Almond and herb–crusted cod with t'faya

    • Potawatomus on May 20, 2026

This was a low effort, high reward recipe. It comes together super easily.

  • Orange blossom lemon bars with mint sugar

    • Potawatomus on May 18, 2026

These were great! It came together easily, and the mint sugar is inspired. The lemon bars are creative and delicious.

    • eclairea on June 06, 2026

Bright, lemony (duh), delicious dessert. The orange blossom water takes this to another level. Do NOT skip the mint sugar!

  • Ras el hanout chocolate chip banana bread

    • dmdmdmmm on May 03, 2026

This was good banana bread! I wasnt checking on it as it baked and by when I did by the 40mn mark, it was already deeply browned. I suggest tenting it halfway through or something. It also took longer for me to bake ir, around an hour. It’s very spice forward and so moist, I really likes it!

    • Potawatomus on May 10, 2026

This is a great take on banana bread! Mine took about 10 minutes longer than the cooking instructions, and I tented it with tin foil at 35 minutes.

  • Amlou croissant bread pudding

    • Potawatomus on May 10, 2026

This was amazing! It was a huge hit at a family brunch. Note that you’re supposed to slice the croissants in half, use the amlou to make a sandwich and then slice the croissants into two inch pieces.

  • Beans on toast with harissa oil (Loubia)

    • Potawatomus on May 31, 2026

This was really good and came together quickly.

Publishers Text

Discover the bold dishes and amazing flavors of Morocco in your own kitchen and uncover what makes this North African cuisine—shaped by Berber roots, Arabic traditions, and Mediterranean brightness—so accessible, delicious, and memorable.

As the daughter of two Moroccan immigrants, Nargisse Benkabbou inherited a world of flavor. Despite living hundreds of miles away from their native country, her family’s table was loaded with Moroccan cuisine: rich spices, succulent meats, unforgettable stews, and savory sauces. One dish at a time, Benkabbou learned her own heritage and, ultimately, kept close to her family’s roots.

Taking its title from the Moroccan word for flavor, Madaq explores traditional Moroccan recipes with an American kitchen in mind. Here you’ll find recipes for Moroccan “flavor boosters” and spice blends; and recipes that range from the traditional to the contemporary, including:

*Tagines, soups, and bowls, from Berber Vegetarian Skillet Tagine with Olive, Preserved Lemon, and Cilantro Salsa to Chicken Berkoukes Soup *Batch cooking dishes to make ahead, from Kefta and Kale Couscous Bowls to Sheet Pan Chicken with Spiced Grape, Chickpeas, and Thyme *Kid-friendly dishes, from Baked Chermoula Potatoes with Eggs to Quick Chicken Bastilla Puff Pies *Sweets and breakfast treats, from Ras el Hanout Chocolate Chip Banana Bread to Honey-Buttered Pancakes with Orange Blossom and Blueberry Sauce *Dishes for special occasions (or for when you have more time), from Berber Stuffed Flatbreads to Ras el Hanout Lamb Shoulder Méchoui with Pistachio and Apricot Salsa

Benkabbou’s approachable and authentic meals deliver that special Moroccan flavor—that madaq—right to your table.
