    Madhur Jaffrey is well known outside of India - ask any cook, they will have heard of her. But it is only recently that she has become more known inside India. Jaffrey is credited with bringing Indian food to the West. As such many of her recipes contain substitutions that move away from the traditional but make the dishes more accessible outside of India. Nevertheless, this is a classic book, along with many of her other books. It is a pleasure to use a cookbook where the recipes work every time. Recently Jaffrey received an award in India for her influence on Indian food (albeit that the influence was outside of India) - it was a very controversial award, given there are many many women who reside/resided in India who have greatly influenced the collective Indian cuisines - mighty women such as Meenakshi Ammal and Tarla Dalal.

      Gorgeous. Made often - allow lots of time though. It truly is a wintery Sunday afternoon cooking project, or use the slow cooker.

      As written, this is a radish sambar - I often use a small daikon rather than 6 red radishes. See her note about the range of veg that can be used as alternatives.

      Totally delicious! A family favourite made many times over the years. Tomato Soup flavoured with lemongrass, ginger and some gentle spices. Eat hot or cold.

      Totally gorgeous. And a hint - if you leave the potato chunks thicker it makes a nice curry! Make a double batch for soup one day and curry the next.
