  • Tom yum soup

      Made this to use up some tom yum paste that had been hanging around in my fridge for ages. Took a few liberties with the ingredients: omitted the prawns, doubled the chicken, swapped out mangetout and mini sweetcorn for carrots and extra mushrooms. Now we like spicy food a lot, but this turned out REALLY REALLY spicy - don't know if I used a particularly potent chilli or if the paste itself was particularly hot, but next time I'd definitely omit the red chilli or at least deseed it. There are 2 kaffir lime leaves in the ingredients that aren't used in the method. Overall: this was a nice tom yum soup, pretty good recipe.

  • Thai-style butternut squash soup

      A lovely hearty soup - simple and warming (though it helps to be in the mood for some chopping). I only had half the quantity of butternut squash so made up the difference with sweet potato. At the end the spiciness was quite mild so I added an extra teaspoon of Thai red curry paste for the final 5 mins of cooking. I felt it was also missing the distinctive Thai sour flavour so I added a squeeze of lime juice to each bowl.

  • Chicken and sweetcorn soup

      I added a small chopped red chilli, and msg, for additional flavour. This works well with tinned corn. For additional veg I also cooked very small chopped up celery when frying off the onions. I would recommend frying the veg in sesame oil rather than vegetable/sunflower for a richer flavour.

      I think this can serve 3 rather than 2 and you still get large portions. The rice isn’t included in the calorie count. Really tasty.

      Excellent. Olives are essential. Salmon cooked perfectly. Could be too much courgette for some.

      Nice simple tasty recipe. I served it with roast potatoes which worked well. I didn't have cherry tomatoes so chopped some regular tomatoes into chunks.

      I made an even lighter version of this, as I wanted to get it down to 300 calories for a fast day. Skipped the red pepper, used less chicken and canned tomatoes instead of diced (since that's what I had). Overall this was a bit blah...the predominant taste was the quite bitter cauliflower, though admittedly maybe if I'd used the full quantity of chicken and the red pepper this would have helped.

      The portion sizes are generous. When you have squeezed all the moisture out of the courgette, as instructed, leave it for a while and come back to squeeze again. You'll thank me later.

  • Chicken tikka masala

      This just wasn't as good as I was hoping for. It lacked a note of sweetness that to my mind should be present in a tikka masala. As well as that, the sauce wasn't as silky smooth as I thought it should have been, I think if I made it again I'd whizz it up with a stick blender before adding the chicken. But I'll probably try a different recipe next time.

  • Chicken satay

      A very decent "light" chicken satay recipe, I was especially impressed by the sauce. I made a couple of substitutions: I used three chicken breasts instead of a crown as I can't get the latter here, and skipped the first slow cook, taking it down to just the 30 minutes + 10 minutes at a high heat. Also I didn't have agave so I used honey. I found the sauce very thick, and I wanted it to have a drizzling consistency so I added quite a bit more boiling water than indicated. This made a perfect low calorie meal for a fast day, served in lettuce cups with some crudités.

      Very nice. It seemed very liquidy.but tasted delicious. Part of me would be tempted to flour the beef before wearing it to help the sauce thicken up

      Made these and they were very tasty. If I make again, I will use pork steaks as they are less messy to eat. Note to self, find blow torch as it could be useful for the recipes in this book

      I didn't make the taco cups. I thought the pulled pork recipe was nice, but turned out a tiny bit on the dry side - the tacos needed some wetness in them, which could have come from salsa or guac, but I didn't have time to make any, so I opted for sour cream. The pickled onions were probably my favourite thing from this recipe, I'll make these again.

      Very nice, especially the red peppers and feta. However it is similar and not quite as good as other similar main-meal-salad recipes I already use, so it probably won't make it onto my favourites list.

  • Baked falafel with tzatziki

      These were really good falafel, given that they're oven baked and not deep fried. They held together well and had a good texture and taste. I served them with the tzatziki, and some other accompaniments (hot sauce, cabbage slaw, roasted pepper strips and feta) in wraps and they were delicious. I used 1 400g tin of chickpeas and got 13 falafels out of them, enough for two people.

      These were pleasant enough but probably not a repeat for us. Even with the crunch of the beetroot, carrot and lettuce the whole wrap felt a bit too soft. I skipped the walnuts and cut back on the chilling time, so that might have had an effect on the texture. A tasty and healthy dinner that packs in a ton of veg but not quite good enough to justify a repeat.
