      Delicious, and chock full of vegetables. I'm typically skeptical of fake meat, but with all the hype around plant based burgers and sausages I decided to give it a try and I'm glad I did. This recipe calls for two cans of pinto beans but I just used one as that seemed plenty to me.

      Made a simplified version of this with ready made pesto but had to use smoked tofu because that's what we had. It was quite nice, I would try again with plain tofu. DH really enjoyed this and M2 but M1 wasn't keen on the pesto tofu mixture.

      I made substitutions based on what I had in my pantry: black beans instead of white beans, slivered almonds instead of chopped walnuts. I also only had 2.5 zucchini, so I included a red bell pepper. It turned out very good.

      This was easy to make but bland, and the dressing had a strange flavor. It was edible but I wasn't excited for leftovers.

Vegan books have risen to a dominant sales position in the vegetarian category. One-dish meals are perennially popular on American tables, and books devoted to one-dish cooking perform well. Robin Robertson’s One-Dish Vegan is the first book at the intersection of these two powerful cookbook categories.

Robin Robertson has built a publishing record of very successful titles in the vegetarian category. She is known for her creativity in the kitchen, for the breadth of enticing ingredients and flavors with which she works, and for her expertise in vegetarian nutrition—with a special focus lately on how vegans still can get enough protein in their diets.
