Notes about Recipes in this book

  • Lemony chickpea-spinach soup

    • Hannaha100 on December 27, 2020

I really enjoyed this. It tasted healthy, nourishing and satisfying, which is just what I needed after holiday excess. Kids wouldn't touch it - I ate theirs too. Didn't measure the spinach - had about 150g in a bag to use up. I preferred the higher amount of lemon. Would definitely repeat this.

  • Roasted vegetable tabouli bowls

    • Hannaha100 on November 02, 2017

Made the rookie error of mixing this all together and toddler turned her nose up at bulgur (would eat all other components separately). If repeating remember to keep separate for her. I thought this was nice, not too difficult for a weeknight but not life changing. Don't know if I'll bother to repeat.

  • Sweet potato barbecue bowls

    • happyeater on June 02, 2015

Delicious! Would also be tasty on focaccia. But I did only use one chipotle and it was plenty spicy. Great with beer.

  • Manchurian chickpea bowls

    • Hannaha100 on January 21, 2021

This went down surprisingly well with my 5yo who doesn't always like curry. M2 wouldn't try it but she wasn't that hungry. Steaming the potato and cauliflower didn't work that well, I think I would boil or roast in the future. Subbed some green beans and sweetcorn for the peas and a tin of chopped tomatoes with a pinch of sugar for the ketchup and tomato paste. Served with rice but there would have been plenty without.

  • Pan-seared portobellos with white beans and spinach

    • LFL on June 07, 2021

3.5 stars. Pretty tasty. My husband stuck to the recipe as written for the most part, except for substituting sake for sherry because that was what we had on hand.

  • Banh-mi noodles

    • pennyvr on December 31, 2014

Really easy to make and tasty.

    • LFL on June 06, 2021

2 stars. Unimpressive. Very sweet but not that flavorful, it's just there. I'm sure it would be better with homemade hoisin sauce but then it wouldn't be a quick fix, would it?

  • Rotini with smoky chickpeas and cauliflower

    • Hannaha100 on October 07, 2020

We all enjoyed this. Kids preferred the cauliflower to the chickpeas. Rotini is very similar to fusilli, which is what I used. I halved the paprika and omitted pepper and shallots. This is quite a filling, starchy meal. 340g pasta was plenty. Recipe suggests making just the smoky chickpeas for a salad or snack, which sounds like a great idea.

  • Spaghetti with cremini Bolognese sauce

    • Hannaha100 on December 20, 2020

12 oz spaghetti = 375g. 8oz mushrooms = 225g A win with everybody! I think this would have worked without the cream cheese too, although we enjoyed that this set it apart from a more standard bolognese. The internet let me down with conversions, so I only used about 1/3 the right amount which is good because I made a note to use more mushrooms next time! An easy repeat.

  • Seitan shawarmas

    • JDAMORE on March 25, 2023

This tastes like a gyro not a shawarma, because of the oregano and lemon juice. I made the seitan with just shawarma seasoning and it did taste like shawarma.

  • Antipasto tart

    • Hannaha100 on November 13, 2017

Made a version of this without artichokes because toddler turned her nose up. Pleasantly surprised that she ate it. Needed more fillings and maybe lower heat (bean base was quite dry) but one to play around with.

  • Curried red bean and pumpkin soup

    • silkworm_paradise on January 01, 2020

Base recipe was pretty bland. I ended up adding garam masala, red chili powder, lime juice and liquid smoke, as well as reducing the amount of liquid to make it more of a stew and mashing the red beans. With these additions, it was pretty tasty served with basmati rice

  • Roasted Brussels sprouts and chickpeas

    • Hannaha100 on August 04, 2021

I didn't have the chickpeas but nooch and smoked paprika on roasted sprouts went down well with kiddos. Would make again.

You will also find hearty soups and stews, meal-worthy sandwiches such as Tonkatsu Tacos and Sloppy Jacks, and skillet dishes such as Fiery Korean Stir-Fry, Black Beans and Spinach with Tomato-Avocado Salsa, and Chickpeas Nicoise. The book also features pasta dishes like Jamaican Rasta Pasta, Fire and Ice Sesame Noodles, and Sicilian Pasta with Chard and Walnuts.
