      These scones were the perfect Christmas morning breakfast treat. Hazelnuts and apricots are a fabulous flavor combination. I used Bob’s Redmill Pastry Flour so the texture was exceptionally light. I brushed the tops with a bit of cream, then liberally sprinkled them with turbinado sugar and finely chopped hazelnuts before baking exactly 20 minutes.

      My husband loves this soup!The combination of spices, apples and dried fruit really makes it zesty. Creme fraiche work as a garnish in place of yogurt or sour cream.

      I have made this several times. Mr. B loves it. It is a flavorful, hearty weeknight soup. 1 add a teaspoon of red wine vinegar at the end. Freezes well.

      This is a great filling soup. Especially good made with fresh thyme. I also add 2 ounces of white wine.

  • Lentil and roasted tomato soup

      This was a big hit. I roasted 2 lbs.of late harvest Early Girl tomatoes from our farmers market. The skins slipped right off and, because they are small, didn't dice them,just broke them up with a wooden spoon right in the pot. I soaked the lentils for a couple hours in salted water, then rinsed well before adding them. They cook beautifully tender this way but keep their shape and don't fall apart in the soup. Used prosciutto as I didn't have pancetta. Also reduced the celery to 1/2 cup as I think the flavor of it tends to take over. Added a splash of balsamic vinegar right before serving for a bit of zing. Husband loved this!

      Haven't made the salad, but made the dressing and love it. Increased the Cider vinegar to 2 tablespoons so it wasn't quite so sweet.

      The mustard balsamic vinaigrette and the toasted spiced pumpkin seeds are outstanding! We increased balsamic vinegar to 3 tablespoons.

      Another great recipe from this cookbook. Quick and easy to make. Delicious and refreshing. Used fresh English peas from our farmers market. Reduced the olive oil to 4 tablespoons.

      Wow! We loved this! The marinade/sauce just pops with flavor. I made the vegetarian version, added some roasted red pepper strips and increased the balsamic to 4 tablespoons (we like our dressings on the acidic side). Definitely will make it with the suggested chicken.

      This is a favorite of my husband's. We use half the amount of rice noodles and omit the bean sprouts. Use peanut oil for the vegetable oil. Also reduce the fish sauce by half, as my husband isn't fond of the taste.

      This is easy in that everything goes into the baking dish without having to cook anything separately. It does however require marinating time so plan accordingly. I marinated for 7 hours and followed the recipe as written except for omitting the cilantro. The end result was full of herbal flavor, moist and delicious. Will make it again.

      The orange thyme combination of flavors worked brilliantly. I did the brining for 3 hours with 1 cup kosher salt and two quarts water for two game hens. I used low sodium chicken broth and did not do the final seasoning at the end and it was just right although maybe a bit on the salty side. My family said I could have even skipped salting the birds before they roasted and it would have been fine. I used fresh herbs from my garden and they really pumped up the flavor of the sauce. I will make this recipe again.

      This dish is absolutely fabulous, just layer upon layer of flavor that makes you want to eat slowly and savor every bite. I was cooking for two and subbed in half of a small flank steak so I only made 1/4 of the marinade and 1/4 of the sauce. I left the steak in the marinade about 1 1/2 hours and then my husband grilled it to medium rare on a charcoal grill. I pre-measured my sauce ingredients while the steak was marinading so it was easy to cook the sauce while the steak was on the grill. This is definitely company worthy or for a special dinner for two at home.

      I frequently have risotto when we eat out, but rarely make it at home,as it's sort of tedious to do. Who knew?! Make it in the microwave! This is a great recipe and is easy to vary. I use Italian Carnaroli rice.

      Nice cobbler. Need to reduce the sugar in the filling;it's too sweet. You want to taste wonderful flavors of the fresh summer fruits.
