      I grew up eating these with a tiny grapefruit spoon. I thought they were the fanciest breakfast. I started remaking them recently and learned that Swerve Brown Sugar Substitute works just as well as regular brown sugar!

      I used vanilla bean paste instead of extract to give it more of a vanilla bean flavor. Good standard smooth pudding.

      A 3.0 out of 5. A tasty potato salad. The salad has a nice zip to it thanks to the Italian dressing. We did not have a bottle of Italian dressing handy so we made the Italian dressing recipe in the cookbook. After adding the mayonnaise we thinned the potato salad out with a bit of milk so it would have a looser consistency. We also added a bit more dressing to provide some additional punch, as well as some chopped black olives for their brininess. We will definitely make again.

      A 3.5 out of 5. It's always interesting when we rediscover how good something is from an older cookbook. The Italian dressing recipe is a good example. The lemon and white vinegar provide a nice tang. The dressing has a greater depth of flavor and is not as salty as the store bought bottled stuff. The recipe calls for paprika, which we used. We have not seen a red'ish Italian dressing in years. Very tasty. Easy to put together. We may stick with the recipe rather than buy another bottle of dressing at the store.
