  • Chunky cherry-double chip cookies

      The dried cherries and two kinds of chocolate take this chocolate chip cookie to the top of my favorite chocolate chip cookie list. My cherries (from Costco) seemed rather large so after soaking them I chopped them up a bit to make sure there would be cherry pieces in each cookie. Next time I will just cut them in half and double the amount of cherries called for.

      Yes, you can have a Hummingbird cake in a cookie. These cookies are fun and except for all the chopping of ingredients easy to make. Plus they look impressive when you are done, truly a cookie to impress your guests. I thought the frosting looked about the right consistency without the added cream so I left it out. Next time I will not chop the pineapple so fine and leave about the size of raisins so you can really notice it.

      I haven't made peanut-butter cookies in years, but these were very good and easy to make. Only four ingredients. Also, there's no flour.

  • Lemon-cheesecake bars

      These are very good, particularly given that they're made with cottage cheese (I used full fat) and have less fat than bars made with cream cheese. Good strong lemon flavor and a firm crust that stored well over a few days. The ground mace in the crust was a nice extra flavor. The cheese filling is thickened with a small amount of flour and therefore isn't as smooth as some other cheese fillings I've had, but it's not super-noticeable when eaten in combination with the crust. I used butter instead of vegetable spray on my aluminum baking pan and the crust stuck a bit so next time I'll use spray or will line the pan with foil.
