      These are great made with homemade rye bread. I used my bread machine to make that step easier. I like to put a slice of Swiss cheese against both slices of bread because, when the cheese begins to melt, it makes flipping the sandwiches easier.

      When this cookbook was new back in 1987, this recipe worked perfectly, but some time in the 1990’s, it became frustrating that the streusel topping kept running off the muffins during baking, causing the melted sugar to bake on the muffin tins. They were a pain to scrub! For that reason, I began baking this in a loaf pan at 350 degrees, which worked out well.

      My husband likes dried fruit in muffins so I usually add 3.5 ounces of chopped dried apricots or mangos to the batter, which turns out well.

      This recipe calls for two cups mashed banana but I have also used one cup banana and one cup mashed pumpkin, which was good too.

      I tried this recipe because it says specifically that either fresh or frozen blueberries may be used. I stirred in a cup of frozen blueberries from our yard rather than the 1/2 cup suggested in the directions. I like to top pancakes with real maple syrup and full fat Greek yogurt. Delicious! The recipe includes directions for homemade syrup using maple extract. I didn’t make it but I like knowing the recipe is there if I’m ever out of the real thing.

      This is my go-to recipe. Occasionally I try other shortcake recipes but I always return to this one. It’s an old-fashioned, biscuity version, just the way strawberry shortcake should be.

      I made this for the first time when we hosted my husband’s family on Christmas Day, 2006. I omitted the hot sauce because some of our guests don’t like spicy food, but it came out so well that this has become a Christmas tradition for us. It’s absolutely delicious!

      Every fall I make a stuffed pumpkin with an ordinary carving pumpkin, using an stuffed pepper recipe as a guide for the filling. I tried this recipe tonight because I liked the idea of including chili powder, corn, and cheddar cheese, three ingredients I have never used this way. I cleaned out a pumpkin 25” in circumference and increased the amount of filling by mixing in two cups of cold rice. To be sure it had flavor, I increased the salt to one teaspoon, the chili powder to three teaspoons, and the cheese to four ounces. After baking at 325 degrees for two hours in a baking dish just large enough to hold the pumpkin comfortably, it came out perfectly! My husband loved it too, so I think this is the way I’ll make this from now on.

      Includes ingredients for the enchilada sauce: 1 can beef consommé, 2/2 c butter, 1/2 c slap flour, 8 cloves pressed garlic, 16 oz tomato sauce,2T chili powder, 2t rubbed sage, 1 tsp gr cumin.

      My book is from 1987’s book edition and recipe and ISBN:0-8487-1471-7 Fabulous dressing. I used instead of anchovy paste 1/2 can Crown Prince flat anchovies in olive oil total 2oz (so I picked off half of that and put in blender with half the oil from the tin) and omitted the 1/8 teas. salt.
