Notes about Recipes in this book

  • Perciatelli with roasted chestnuts, butternut squash, and goat cheese

    • AgusiaH on February 23, 2014

Like bucatini - thick hollow spaghetti with the hole through all the length. Both used to make amatriciana. I added asparagus, roasted pork loin and simply cooked (not roasted) chestnuts. Very nice recipe.

  • Miso-glazed eggplant

    • inflytur on March 27, 2020

      Don’t substitute larger eggplants.

  • Fish cookies

    • MiMi60 on August 26, 2018

This recipe is on pg. 317.

  • Lemon-saffron millet pilaf

    • wkhull on November 22, 2020

This was easy and tasty. I omitted the saffron. Served it with braised turkey breast and gravy. I found after the 25 minute simmer, much of the liquid still remained and had to continue to simmer at least another 10 minutes. This was a great healthy substitute for mashed potatoes.
