I cook quite a few curries and while cooking this, I was rather concerned at the quantity of spices, for example 4 teaspoons of garam masala in the sauce as well as 2 in the marinade. Everything was telling me this was going to be inedible never having used this amount for a curry for 4. However, I pushed past it and resigned myself to maybe ordering a curry instead. We ended up with a good curry - spicy yes, but not blow your head off. I used two good sized chicken breasts and a tin of chickpeas instead of 4 breasts. Served with Kashmiri pilaff and naan. I will cook this again and put my opinions firmly back in the box. I am not a chef and should have a little faith! My husband who orders balti when we eat out, thoroughly enjoyed it and wants me to cook it when the boys are home (whenever that might be..)
