      p. 81 This was the perfect recipe to highlight the fresh flavours of the best produce the season has to offer. I used an Italian Foglie D’Ulivo Agli Spinaci vs the Orecchiette. The wine/vegetable stock sauce is light and subtle and the final sprinkling of Parmesan enhanced the earthy flavours of the morels. Simple and delicious. I did add some green garlic and regular garlic for some extra punch.
