      This is an all-time favorite in my household. I sub the skim milk for vanilla unsweetened oat milk. So good!

      Not super flavorful with strong coffee. I'd recommend using more like a coffee concentrate or very strong espresso.

      Needs more liquid than the recipe calls for in my opinion - 3 tbsp oil, 2 1/2 tbsp brown sugar, 3 tbsp coffee, plus 1 tbsp maple syrup works well

      This had good depth. I did throw some whole shishitos in with the carrots on the roasting pan and wish I had thrown more. Has a nice sweet flavor, but not overbearing. I'm not a fan of over-lemony hummus, so I did cut back on the lemon juice.

      This was a really good use of left-over salmon. We served it open-face instead of rolled up. Loved the tzatziki sauce adaptation with the roasted tomatoes and mustard - really complemented the salmon.

      This recipe is a little 'extra'. I omitted the clam juice, pastes and calamari then used sriracha and shrimp and it turned out great.

      I don't know that I'd make that as a stand-alone salad side dish, but it was great with the Salmon Gyros. I did mince the white onion bottoms and added it to the vinaigrette.

      Great veggie chili. It was very thick at the end of cooking so I thinned it with a little water. The pepper vinegar was too spicy for me so I left it off. I would make this again.

  • Roasted carrots with Spanish spices and harissa yogurt sauce

      I made this recipe with regular peeled carrots and it worked just fine. The harissa I used is New York Shuk available online and highly recommend. I'd make this again. I watched a video online from Food Network featuring this recipe and they added a pomegranate dressing which would be excellent. I'll try that next time.

      Add the pomegranate dressing recipe available on the Food Network if it's not in the book. That would give it a nice little bit of acidity

  • Roasted cabbage steaks with caraway vinaigrette

      I found the vinaigrette way to acidic. The cabbage ends up coming apart instead of staying in a nice steak format.
